Great skills! There was this place in Sha Tin that sold roasted goose with a sour plum sauce. I loved it and it is to this day one of my fondest food memories. That was in the early eighties. I was so hungry from crewing in an army dragon boat during the Tin Hau festival race, and that goose was just what I needed after a hard race! Hong Kong is the food capital of the world! 😋👍

Actually, I think he could have done a better job with his bladework. The food could be cooked perfectly, but if it was cut up poorly by a novice, the meal experience could easily be ruined. I actually take home ducks, goose, offal and cut it up myself properly, unless I have observed the chopper's technique and determined it was good enough. Best I've seen so far was an older woman in Cambodia, Hong Kong takes #2.
