Love Vitamix! I started grinding my own flour this week because here in my country commercial flour has a lot of unhealthy chemicals. I’m very exited to bake a lot of different things with this homemade flour ❤

May I suggest doing some research on changing out your fresh milled wheat berries flour amounts from bread flour. The amounts are not going to be equal. The whole ground wheat is going to also react differently to yeast amount if I recall correctly. I do know, if you like a lighter loaf, not so dense, there is hard white wheat berries. I recently started grinding my own flour too. I even had to adjust flour amounts vs store bought wheat flour. Have fun learning!

I have found that if you replace 1/3 to 1/2 of your freshly ground wheat flour with bread flour a better raise is obtained. I think your loaf looks just amazing. Great job!

Your bread looks delicious!Thanks for sharing. I have never tried the wheat berries. I don't have a Vitamix, I am wondering if I could use a Ninja system?? I admire your skills, and with what is going on in the world I think we need to learn something new everyday. God bless you and keep you!

I couldn't find the recommended vital gluten that some recipes call for, so I researched and the best & healthiest substitute is xanathan flour so I used 2 tsps with my whole wheat flour and cooked wheat berries and the result was wonderful. Check that possibility out. I like your video!

Why didn't you proof your ACTIVE dry yeast in water first?? It's different from INSTANT dry yeast. ( you just add that to your machine)

Hard red winter wheatberries are a darker shade than hard white winter wheat. You are working with a whole wheat not the typical all purpose or bread flour which has been more finely ground and doesn't use the whole grain whereas these are whole grains. I love the taste of whole grains but do mix in 1/3 or 1/2 of the flour needed with either bread flour or all purpose flour. That gives a lighter texture and better rise but isn't as nutritious. Play around with blending flours to get the right consistency for you. I have both red and white winter wheatberries and those can be blended with each other as well.

I think the better thing to do is sift out as much of the whole wheat as possible. Cooking bread 100% whole wheat while healthy is difficult to manage and not ideal.
