When you are about prepare a new uttapam, just sprinkle some salt water and wipe out with wet cloth.... this would bring the pan to lesser temperature and the coat from salt and water would not allow the uttapam to stick.... OR OTHER WAY: heat a tsp of oil in the same pan and roast some cut onions on that pan... the oil from onion would act as non-stick coating..... This way is also good....
