I really truly love that she seems to do this mostly from by eye, but still gives rough measurements for viewers; it shows she has a lot of personal cooking experience and doesn't just read out of books. Aside from baking, I hardly ever cook by measurements because I've been cooking for my family for so long now, so this was refreshing. Delicious recipe, sweetheart. I just wish my boyfriend liked mushrooms so I could make these all the time!

Remember she has ( 1 ) thing up on most of us. Since she was a little girl, she has grown up working with her father in their family restaurants in NJ so she really knows her way around a kitchen and all the little tricks that the pros do.

I used this filling plus 6 garlic cloves instead of 3 and filled Portobello Mushrooms, last 3 minutes I covered them with Mozzarella too. Out of this World!!

That sounds good. You think this recipe would be good with a different cheese. I'm not too fond of parmesan cheese.

We found your recipe, tried it and oh my how good. I had to much stuffing left, so I lined another pan with tinfoil, drizzled olive oil, put in 2 boneless chicken breast, packed the extra stuffing on top of them, baked about 40 min in my air fryer. Delicious!!

Laura- I doubled the stuffing, and spooned the stuffing in, around, and on top of the mushrooms and told my family it was "funghi disordinati." They cleaned out the pan! Thanks for all the great recipes!

Fabulous!!! and easy too! Last night I made your chick pea bruschetta and it was wonderful! I think I will make that for Easter appetizer. I just used what I had and I didn't have parmasan so I used sharp cheddar and I didn't have fresh garlic so I used powdered and I used them as a side for my slow cooked ribs I made tonight and I'll also be having that with some mashed potatoes with sour cream. So excited for tonight's dinner! It's going to be fantastic!

I tried this today and it was uhhhmazing. I added bacon used any mushroom (don't even know which one cause I don't care mushrooms to me are all the same) I didn't follow the recipe as far as measurements I eye balled it and I KNOW how insanely wrong it's gonna sound but I've got 3 kids just made a trip to the market yesterday and couldn't bring myself to go back for 2 ingredients so I used regular sandwich bread and dry parsley. BUT it was uhhhmazing it was so good even tho I had to use different mushrooms, non fresh bread/parsley and didn't follow measurements. I'd say it's fool proof and I can't wait till I try it the proper way!

I've always wanted this recipe! Such a pretty, easy, delish appetizer for any occasion. Thank you so much! While I wouldn't use Kraft Parmesan Cheese to make this or any Italian recipe, it does have its uses. I use it as a binder because it's great for that but also imparts extra yet mild flavor. I add it to my meatloaf & mashed potatoes. It really does make your mashed potatoes perfect. My hubby doesn't like anyone's mashed potatoes (including his own mother's) but mine & the Kraft Parm is my only "secret" ingredient. I dare you to try it Laura! Plus it has 0 carbs so I often use it as a quick seasoning on veggies when eating low carb.

I like to put cooked bacon and shallots in my stuffing. Also after baking top off with parmigiano and broil a couple minutes. Always a hit at parties.
