SAUSAGE & EGG MUFFIN with filth cheese sauce
Ingredients
4 x pork breakfast sausages
4 x English breakfast muffins
4 x eggs
400g Tofu soft
100g Miso paste
60ml Rice wine vinegar
Method
1. Combine Tofu, miso and vinegar in a blitzer
2. Break pork mince out of sausage skins and form into pattys, cook in a pan to brown
on each side
3. At the same time fry the eggs
4. Toast muffins and assemble

agreed, I want a running yolk but these days I try to get them 50/50 so I do not loose the yolk, its no joke.

The sauce makes it, the combo is just fantastic. Suggestions to add to it smoked salt or paprika, bacon, hot sauce, Jalapeno or my favorite mushroom powder which is just dried mushroom rant through a spice grinder and you can find both pre-made powder and dried mushroom online with ease.

Something I learned in business school (and maybe it's obvious) is that there is a difference between what people say they will pay (or even buy in general), and what they will actually pay (or buy at all). Still, a great looking sandwich.

Family loved this. BUT we do get our breakfast sausages from Butcherbobs which happens to be 90 miles away. we pick them up when seeing family.

Not sure on that sauce, but I think I'll have to give it a go. Idea...how about getting a couple rashers of bacon, and chopping them up and adding to mince to make burgers.

I make a more close-to McD's but use toasted, well buttered Bays Sour Dough English Muffin, and I use an egg poacher to make a fluffy egg (none of that flat-fried boring egg), American cheese and a nice piece of Canadian bacon. The poached egg makes a very full sized sandwich and the buttered sour dough muffin really add much needed flavor that McD's doesn't have at all. This one he does looks interesting, but when he said Tofu, it wasn't for me.

I'm Lovin' It, Finger Lickin' Good, Have It Your Way, Where the Food's the Star, Think Outside the Bun, Eat Fresh, The Last Great Hamburger Stand, World's Greatest Hamburgers, but then the real deal! Put some chips and salad with that and it would be an easy tenner over here. Just 6 - 6.50 as is. Nice job again John.

I made the cheese sauce and it wasn’t good at all mate I’m thinking the tofu has to be a high quality one as it’s the main ingredient I bought the only on I could find in the supermarket and wear as yours looked like Panna Cotta mine was grey and grainy ahh well can’t wait for my bacon to arrive

simply, everything is better when bigger. them extra ingredients make the different the egg is defiantly better cooked that way... too bad its against code regulations for a fast food chain to under cook their eggs like that

Not a fan of how those muffins look. I like the ones with pockets of air in them that form those nooks in the muffin that are great at absorbing sauce. Otherwise, looks good.

These muffins, though, look very dense "bready" in texture. Typical Thomas-brand muffins have the pockets, but certainly not the volume. I think he went this direction, because he wanted a bun that could stand up to the thickness of that patty.

Quick question, chef. How does that sauce work for a croque monsieur? Does it brown and bubble up? I do a quick-like croque monsieur with sun-dried tomato or cracked pepper turkey breast, and spread caramelized onions on the bottom slice of bread, that I've pre-toasted. But I'm wondering how much of the miso-tofu you're suggesting I use. Would you use any proper gruyere on your miso-tofu monsieur?

Too runny mate! Eggs over easy, yolk broken but still gooey please. Not only easier to eat in the car but the best part of the egg doesn't end up all over your board/shirt :) We make em like this at our drive thru cafe in Australia with chilli jam and american cheese and they're popular AF :) Plus we charge 2 quid each and make good money off it without skimping on any of the ingredients.
