Fascinating dessert of Moldavian cuisine - black dessert called “Babka Nyagre”. It is very difficult to say what it looks like: neither a cake, nor a toffee, nor a pastry, or a sponge cake, but just something really magical and fascinating. A moderately sweet, moist, very porous, springy dessert. Please note that all the ingredients are almost white, but in the process of cooking Babka Nyagre gets a gorgeous chocolate color! This recipe has a lot of baking soda, but it is not felt in the finished dessert. For baking, be sure to take a form with very thick walls and observe the temperature regime - and then this MIRACLE will surely happen in your kitchen.
Eggs - 10 pcs.
Wheat flour - 300 gr
Sugar - 300 gr
Vegetable oil - 200 гр
Kefir - 300 гр
Milk - 500 гр
Baking soda - 1 tbsp.
Vodka - 2 tbsp.
Butter - to grease the form
1. Sift flour, add baking soda, sugar and vegetable oil, mix well.
2. Pour kefir, mix, then milk and mix too. Add vodka, mix. Vodka helps to remove the taste and smell of baking soda.
3. Beat eggs into dense foam. It is very important to beat the eggs very well.
4. Carefully add the eggs into the mixture.
5. Be sure to bake only in thick-walled forms, otherwise the dessert will simply burn! Grease the form with butter. Pour the mixture and bake 90 minute in the oven preheated to 200 degrees Celsius for 90 minutes, then reduce the temperature to 100 degrees Celsius and bake for another 90 minutes. Do not take out the ready dessert from the oven for at least 30 minutes, and it is better to leave it in the oven until it cools down completely.
