Is there still a plastic component to the duraceramic coating our is it entirely metallic?

No there's no plastic in it. It's a pretty simple coating made by a Germany company. Look it up and they post all the details.

Wow, it somehow magically creates grill marks on the sandwiches even though the cooking surface is completely flat...

At 1:07 you can tell that the bread had grill marks before they grilled it. So it was probably bought like that
