Hey Dudes. been awhile. First and foremost, thanks again for another informative and entertaining BD session! I guess I've been laying low a bit after having bombed out in the first round of the NHC. Oh well, back to the drawing board and I still have allot to learn from youse guys. Just a quick comment before I head out into crappy weather to my crappy office, but I just love how browns and porters/stouts change character as they warm up in the glass. to me often better as they get warmer. Anyway nothing to do but "Brew On!" Thanks for making my day better!

That's a nice looking Brown Ale you have there! Sounds like you improved on your last version which is always a great feeling when tweaking our home brew recipes and getting in the right direction you're after. Good choice on the Challenger. I've used that in a RIS and a couple of other darker beers with good success. Cheers!

London ESB doesn't ferment maltotriose in the wort , never got lower than 1016 without adding sugar which I don't like doing . Nottingham ale yeast for my brown ale . I live 50 miles from Newcastle. Newcastle brown ale (mad dog) is not the same since the factory moved .

This makes total sense. I tried the London ESB in my most recent brown and it only got down to 1.018. I was quite puzzled since the previous three times I brewed it with London Ale and it was always getting down to 1.010-1.012.

I’ve had some attenuation issues recently too. 4 out of 5 of my recent beers have under-attenuated. I have no idea what the difference was between the good fermentation and the lackluster fermentation. Clearly process...but I’m clueless!!

I think a strong pitch of yeast is the first start. Mash temps are the next thing to try. Mike wanted to work out his water since he felt he had the other two things down. - John

Did you hot steep or cold steep the dark grains?

I think they were added to the mash. Since Mike didn't call out that he cold steeped the dark grains, I believe he mashed as usual. - John

With the beer being drier, the bitterness from the challenger might feel more prominent. If you do want to try a different yeast S04 is always a good call.

I really like WLP013 London Ale, attenuates more than ESB/WLP002, and slightly more esters than WLP 007 IMHO.
