No commentary.
I'm just making filtered coffee quitletly with the CT62 dripper using the 1zpresso ZP6 hand grinder.
The beans were roasted at the end of August 2023, and it's the favourite in my cafe, the ASK Coffee Roastery Singapore.
Formerly known as the Yunnan Red Wine, it has since been renamed as the Majestic Merlot.
The tasting notes are much more mellowed now with less of the funcky smell, but the taste is still very good. It seems like the sweet notes are bursting with a hint of bitterness.
As the coffee cools, the coffee gets sweeter and sweeter, and the bitterness seems to have reduced drastically.
The 1zpresso ZP6 tends to highlight the brightness in the coffee, and the CT62 has the tendency to brew filtered coffee with more sweetness and body.

I think this is a perfect match in heavy as I am looking for some acidity (which is still mildly present in this aged coffee), more sweetness, and a good body.
