You can check if colour is natural and made from vegetable extracts.

This is trickiest of all biryani to make because veg will release moisture and perfectly cooked rice will turn mushy. Not great biryani for keeping in the fridge as next day all veg will look dull.

@@poonambhugowandeen3579 It is the most technical biryani you will ever try. VahChef has one or two recipes. The important part is to remove maximum moisture from the veg. My grandma used to dry chopped carrots, cabbage and green beans in the sun. This was for making Veg Acahari (Indian Pickled Veg). I wonder if this technique can be borrowed for the veg biryani? 🤔 The simplest veg biryani is spinach & potatoes (Aloo Palak) biryani. I made it in a small pot for 2 people. So easy and rice tasted like biryani rice.
