Bro, sorry of topic with the video but I have to really thank you man. 2 years ago I made my first bread thanks to your tutorials, and never stopped since. Yesterday I made bread for my mom and dad and they were so happy. Its a great feeling to give great food to people we love. Thank you so much :)

Chef, the morning you posted this I asked my 73yo grandma what she wanted for dinner. Before I even saw you posted this she told me chicken and dumplings! Tonight I made this for my grandparents, mother, and my girlfriend. My grandma who doesn’t eat a whole lot ate TWO bowls. This is truly one of the best meals I’ve ever made and the credit goes purely to you. Thank you so much.

My kids are of retirement age now and they had this dish about once a week while growing up. Back then, we just started with a whole chicken but I like your idea better.

You really hit a nostalgic nerve with this one, Brian. I loved my mother's chicken and dumplings. All I wanted was a bowl of her light-as-air dumplings, forget the chicken and whatever else she put in. I never got the recipe from her and she passed way too young. I'll be making your recipe soon. I can't love this enough. I grew up on chicken and dumplings - the hen was pulled from the barn yard and into the pot on the wood stove. I make my own updated version that includes - wine and poultry seasoning 😀 I also add a pinch of sage and poultry seasoning to my dumplings. I've never made it with cream, I may have to try it.

YES! Finally another cook who uses poultry seasoning in their soup! I’ve been using it for years and it takes ordinary chicken soup to the next level, with just a hint of thanksgiving stuffing flavor. This is almost exactly how I make my chicken and dumplings, perfect for a snowy evening. 😊

In the swedish speaking part of Finland we call it ”klimpsoppa”. We make it with beef though and often put raisins in the dumplings. 😋

Yeah this version is basically like a pot pie. Usually chicken and dumplings is just gravy/broth with chicken in it and then the dumplings. Like a whole chicken gets boiled to cook it and make your stock then its pulled from the bone and shredded, stock reduced and tickened ro your desired consistency and dumplings dropped in to cook. In the deep south states they make these big ass thick square shaped noodles and call those dumplings. It's really chicken and noodles though. Real dumplings are just like these in the video.

Yes, I agree..in fact, there are several brands of flat egg noodles that are marketed as “dumplings.” All these alleged “experts” on southern dumplings don’t know what they’re talking about, as most of them are describing noodles, not dumplings, and why can’t someone have an interpretation that’s slightly different without it being deemed “wrong,” which it certainly is not?? This is certainly pot pie influenced, but pot pie crust uses oh, what is it, cornstarch I believe for that crumbly texture. If it’s delicious and has floury, fluffy, rich “dumplings” on top, why can’t he call it dumplings? Geez..ppl are so intolerant lately..@@Appalachianasshole41

Normal chicken and dumplings doesn’t usually have any vegetables, so this is definitely more of a pot pie/dumpling mix

My grandmother made chicken and dumplings and it was a family recipe using a whole chicken but no peas. The dumplings were made using Bisquick, set a timer and don’t lift the lid! There is probably a recipe on the Bisquick box even today. When I saw you cut into that dumpling it was perfection. Thanks for the memory.

This brings back precious memories of my late great grandmother and late grandmother (mother and daughter) making chicken and dumplings in the 1970s and 80s. They cooked fresh chickens from their back yard and vegetables from their neighbors' gardens. These two phenomenal women made blankets from those old foot pedal sewing machines and the best homemade biscuits and cinnamon rolls. I was the one always in the kitchen watching, tasting, and learning how to cook without measurements. Great recipe Brian!

The video name immediately took me back to my grandma’s kitchen many years ago. Thank you. But her chicken and dumplings looked totally different. I recall bone in pieces of chicken and not so many veggies. Her version was delicious - a family fav. I’m sure yours is equally amazing - just different. Thanks!

I was going to comment exactly the same. I loved my grandmother's version when I was a kid. There were carrots and probably celery and onion, but hers included sliced hard boiled eggs and did not have green peas. I'll have to try this recipe and see how it compares. Definitely nostalgia food!

Chicken and dumplings are my favorite. My grandma made the dumplings with Bisquick. This is basically my recipe, though I have never used fennel or garlic in it. Will have to give that a go next time.

Didn't know you're a Chef. I was just browsing You Tube for a fluffy dumpling for the chicken and dumplings I made. I was drawn to this video. I made them. 0MG ! I will forever use your recipe. fluffy, light texture, delicious. I did Sift the dry ingredients and cook for 20 minutes. Wow, delicious.

Love this recipe, so homey and comforting! After making it a couple of times one tip is that you’re using a deeper pot, or are finding the dumpers aren’t cooking right-throwing it in the oven to bake for 10-15 minutes works wonders!

What an unfortunate childhood to not have grown up with dumplings atop your stew. They were one of the fave winter dishes in my house growing up. I make those dumplings with caraway seeds in them and put them on top of an awesome pork “stew”. Those flavors are just as homey and delicious as the chicken. My mom always called it Dublin Stew. IDK if it has any actual Irish connections but it will always be Dublin Stew to my family.

I just made this for the family and their eyes rolled back in their heads. Thanks for the incredibly comforting recipe! Oh for anyone who may be in the same boat in terms of lactose, I’ll tell you that omitting the heavy cream from the gravy still results in a delicious end result!

I am not the target audience but wanted to leave some feedback on the dumpers. I'm not in the US, purchased the closest grind we have to US AP flour, and measured the ingredients by weight. The dumpling dough was too loose to quenelle, even after letting it sit for a little while. I dropped them into the chicken anyway (on the stove right now). I didn't really grow up with chicken and dumplings but have been craving them lately and haven't been able to find a recipe where the dumplings turn out as promised with German 405 or 550 flour. Edited to add: The dumpers turned out nice and pillowy and fluffy, even though they weren't evenly sized. :) I also halved the amount of black pepper in the dumpers and in my opinion, that was still more than enough. Will try this again.

What you did is basically how my Sister in Law makes it and its amazing. One thing she does differently is her biscuits are more done on the top. It gives a great varying texture. Love em!

This is a very much winter warmer dish in the UK. What would work well is to cook the dish in the oven once the dumpling mix is added, they then become what are called in the UK as Cobblers, there still soft dumplings however with a beautiful crusty top. Excellent as always Briiiiiiiiii

I had a Mountain House chicken and dumples meal after a twenty mile leg of my annual birthday backpacking trip this past winter, and it was the most comforting thing that I'd ever eaten. Even freeze-dried, the chicken and dumplings magic is there.

Made this tonight and got rave reviews! One of your best recipes that I've made of yours and one of the best I've made at all! One thing though that didn't affect the end product was I had about twice the dough needed to make 18 dumplings. No big deal just an FYI

Very similar to my mom’s except no fennel and parsley missing from the dumplings (maybe fennel not grown on her family farm 70 years ago in the mountains of western Maryland? where she grew up). I’ve seen other recipes called „chicken and dumplings“ but this is the real thing- at to me.

Very similar to my recipe, only significant difference is I use leaks instead of celery. Adds a really nice little onion and garlic taste. Gonna have to check out the rest of your channel.

My pro tip is to replace the salt in the dumpling batter with some Better Than Bouillon. It gives them that "Chicken in a Biskit" vibe.

This is very similar to the way my mother-in-law made chicken and dumplings. One of the first times my future husband invited me to his family home she made this marvelous dish. I married the oldest of her six sons, so you can imagine the industrial sized pan she cooked it in. It was a feeding frenzy.

So I made a half recipe tonight and it was very good, rich and filling. The only negative was my fault, adding too many dumplings to the pot. They didn't have enough room to expand. Live and learn, I'm only 73. The texture was perfect, fluffy and light. The only substitution I made was chopped mushrooms for the fennel. Thanks again, Brian!

I was just thinking the same thing! lol Whether to add vegetables to the chicken and dumplings is an argument where I'm from. Neither of my grandmothers added vegetables, but had them on the side. They'd definitely like this recipe, but they'd tell you it's "fancy" in-laws visiting stew.

I made this last night. My dumplings were still uncooked. But I figured my Dutch oven size is smaller than the video. Due to crowding. I popped it in the oven, broiler to high and cooked them the rest of the way. A bit too long, little, uh, toasty on top. The end result is a fantastic recipe. This will be a keeper in my cooking binder.

Hey Bri! Looks delicious and warming especially on a cold winter night. Like the idea of "lighter dumplings" as her in the UK they're traditionally made with 2 parts Self Raising Flour, 1 part beef suet, enough cold water to bind & with herbs/seasonings of your choice. I can't even express how amazing this soup is! Even more mind blowing, my picky 8 year old son watched the video, wanted to try it, and then proceeded to eat his whole bowl. He was so desperate to have leftovers to take to school, we even bought a Thermos that night. Then a few days later, he asked when we could have the soup again. Without knowing my kid, it's hard to communicate how huge this is, but suffice to say he's never considered soup a food before 😂

The easy dimpling on 1 Egg 4 teaspoons flower and at Salt pepper if you need just a little, mix and put in the boil soup and them ready and delicious and healthy yummy grandma always right

You must mean tablespoons right..4 teaspoons is one teaspoon over a tablespoon..four teaspoons flour plus a whole egg seems pretty eggy..or does that actually work..?

hey there, Bri - love your stuff. I was using the recipe on your site and the cup measurement of milk, for the "dumpers", has "2 1/4 cups" listed. I realize the grams were posted beside it but I am a dumb American and used the unit of measure I am most comfortable with and yeah.... thats a lot of milk. You may want to correct that for others who are liquid-gram challenged.

I really enjoyed this dish, the flavors were great. I had to cook my dumplings longer because of our elevation plus I had to cook them in batches because my dutch oven isn't that wide. My wife really liked this and we just finished left overs today.

In Mississippi, it’s definitely unusual to put veggies in your chicken and dumplings but it looks good! We usually just boil the chicken, but your chicken thigh technique is definitely something I’ll be giving a try!!

Really nice idea. Somehow I will give less meat to the soup, but add some ground turkey to the dumplings (fried, smashed and cooled before adding to the dough). Also a good tip is to roast the chicken in the same pot u will cook the soup, so all the fat stays in one place.

My grandfather who was of German decent made my favorite Chic-n-Dumplings. He made more of a fresh pasta, cut into wide strips, and the liquid was not as thickened. But I'm sure this is awesome as well, as been everything I've made from your channel. I've got drumstick/thighs I bought on sale defrosting to make stock this weekend.

I just made this tonight. I had to double the poultry seasoning in the recipe and used more celery since I couldn't find the fennel, but it came out very good!

There are two types of dumplings for chicken and dumplings: drop or rolled. This is a drop version, where you are basically creating a biscuit dough and putting them into the liquid to cook. Rolled dumplings are more like noodles, just thicker and heartier. The dough is heavier and then rolled out and cut into long, wide strips, dusted with flour to keep from clumping together then stretched a bit as you place them into the liquid. The end result thicker and chewier than a fluffy drop dumpling. Both can be a ‘spent all Sunday in the kitchen’ dinner with boiling the chicken, stripping the meat and simmering the bones by themselves a few hours more for the stock. That is “Grandma’s secret.” But, we have instant gratification in rotisserie chickens from the grocery store or use chicken breasts or thighs. The flavors we’d get from hours of simmering can be achieved with boxed or canned chicken stock, so it’s pretty much just the dumpling creation that takes up a lot of time. That might keep it out of work night cooking, but safely within a lazy weekend.

I grew up in the south on the rolled version and watching this has definitely made me curious about making the dropped version. Not gonna be "that guy" and declare one method be all end all method, but there is curiosity now...

@@carsonscherer4611 This drop dumpling is some new ish. I never saw or heard of this before 5 years ago. Rolled flat dumplings or "slick" dumplings are the only thing that I ever knew existed, and I've lived all over the US. This new thing is a KZbin/social media trend. You wont find these in any restaurant that sells chicken and dumplings or soul food. I'm sure that they are good as most of Brian's food is, but this isn't "real" Chicken & Dumplings.

dumplings are such a nice and cozy meal! i personally prefer the dumplings to be more gooey and chewy, but flakey is pretty good!

I was pleasantly surprised to see you made the fluffy, drop biscuit type dumplings that I grew up with in Wisconsin. Light as a cloud and utterly satisfying. I live in the south now for several years( GA,SC,NC), and the chicken and dumplings served here is with a flat chewy strips of dough in varying widths. Some places do very wide squares and some are rectangular strips. They are similar to the homemade noodles for chicken noodle soup I make. Two very different dishes.

Tried it out, but with a different blend of veggies (including potato). Excellent recipe, works perfect with whole poached chicken to get both the chicken meat and broth. Great way to make a lot of food easily.

Thank you for the fantastic recipe! I made this using rendered chicken fat for 1/2 of the butter in the gravy and in the dumplings, and was absolutely fantastic. Definitely added to the rotation

I really like adding a packet of sour cream and chive potato flakes along with a 1/4 cup of grated parmesan cheese to my dumpling dough mixture. It really adds even more depth of flavor to the dumplings

I wanna say my Mom used to use bisquick for making her dumplings but the end result looked like yours and not the pasta like dumplings so many videos and chefs cook up (I think those are southern style?). My mouth is watering and I'm really missing my Mom now. Thanks for sharing.

Finally someone did chicken and dumplings right. None of this flats (basically noodles) stuff. That being said unless I missed you removing them I see two issues. 1 the stems of the thyme and 2 the Bay leaves.

I like how Brian describes this as ‘mom food’. Chicken and Dumplings was my #1 favorite dish my mom made for us growing up. She passed away in the mid 1990s shortly after I turned 20 (cancer). When my wife makes this dish for the family, I always gush about my own mom. While I cook all the time, it’s not a dish I make-the ladies in my life nail it every time! Two thumbs up for this delicious nostalgia dish.

Hell yes to biscuit dumplings vs. the flat, rolled-out ones. My mom has made chicken and dumplings forever with the drop biscuit recipe from the Jiffy Mix box (~6c chicken soup to your liking, bring to slow boil, drop dumplings, cover & simmer on med-low for 25mins,) to the point that I was greatly confused in my late teens, the first time I saw flat dumplings in a restaurant's menu photo. Mrs Dash's chicken spice blend is a great specific poultry seasoning for the soup part, and some Valentina hot sauce on top in the bowl works so, so well.

Am 80yrs old and grew up on those fluffy dumplings. We had a cousin from the Midwest who invited us for chicken and dumplings and were served wide flat noodles as dumplings. Very tasty recipe but strange to eat noodles instead of heavenly clouds.

Gonna make this for sure. My wife loves chicken and dumpling soup and I think most dumplings I've made were undercooked or something compared to how fluffy and non-gluey yours are.
