I vastly prefer crunchy cookies over chewy, so this recipe is right up my alley. Growing up, whenever my grandma made big batches of cookies, the kids always got the dark or crispy cookies first, while the other ones went on to get decorated. So my mom and I are much more fond of those and actively avoid any super soft, pale cookie. Whereas my best friend hates crunch, lolol

These cookies were the first thing I ever made with a stand mixer and they were great. The video doesn't really stress how important it is to leave them on the cooling rack for a while but they tasted much better after sitting. My family thought the chocolate was just a touch too bitter so I'll be trying 60% next time. The cookies taste even better on the second day after you refrigerate the leftover cookie dough! Totally different texture but still very good.

To make it even faster with even less clean up make the dough IN THE PAN where you melt the butter. In order to do this melt the butter just under half way over low heat. Remove the pan from the stove to a cool surface like your granite counter top and use a whisk (no mixer!) to incorporate all the rest of the ingredients except the flour and chocolate. The sandy texture of the sugar and the whisk will break up the rest of the solid butter and everything should become homogenous at room temp. The bottom of the pan should not feel warm at this point. If warm, spray the bottom of the pan with cold water for a few seconds. Making cookies in a hurry is one of my specialties but your recipe is my first attempt for a crispy cookie. It turned out AWESOME. I love the sweetness level. I've been using way too much sugar and not enough salt! Thanks for another winner! And thanks for keeping it clean.👍 P.S. Is it supposed to be 1/2 a tsp or 1/2 tbsp of baking soda? I used 1/2 tsp which was 7g on my scale. That worked. P.P.S. You scared me with the Corn Syrup until I realized how little is require...But how about using agave, honey, golden syrup, or maple syrup?

Tried these today. PHENOMENAL. My first time, and it took me more like 45 mins, also with distractions. Still, from desk to dunkin’ cookies in 45 is pretty damn good. I’ll just have to make more to improve my time 😅. Minor diffs in what I did: toasted pecans (cuz Louisiana roots), Ghirardelli Intense Dark 72% (cuz the market didn’t have what Bri used, but it was still awesome), and I forgot to reserve choc for topping. All in all, this recipe is off the hook and Bri’s the man.

Today I needed to whip out some chocolate chip cookies for an afternoon gathering and the recipe I tried from another website failed pretty badly. I was in a rush and so glad to see this. Tip: You can melt butter on a higher heat as long as you just add an ice cube, make sure the pan isn't too small or it'll bubble and overflow, and when melting it make sure the pan isn't too hot or it'll brown, unless you like brown butter in your cookies, if so, good on you

These cookies were simple and extremely tasty. This will be replacing my previous "crispy" cookie recipe. I've made your ciabatta - it's awesome. Use it for breakfast sandos (egg, cooked bacon, spinach, feta mixed into an omlette type patty with a slice of havarti on top) and I've take your techniques from other breads and applied them to my own recipes with great results. I feel like you are great at giving the pointers that will level up my cooking/baking game greatly while not using some obnoxious ingredient or kitchen tool. If you ever start another channel that is more enthusiast focused for those people looking to invest in this stuff as their main hobby, I'd be all over that. i made this and feel like I followed your instructions (at least what is on your blog) but the cookie did not come out right. the flavor was there, but the consistency was off. my butter wasn't mixing into the sugar and I had to constantly scrape down the bowl and make get it incorporated. when i finally moved on to mixing in the flour the dough was still pretty oily. they spread out super wide and thin too. i know you can't diagnose the issue but just thought i'd share.

I had just watched the video and then the next day made Italian meringue buttercream and thought what better way to use my yolks than to make these epic looking cookies. I tripled the recipe since I had 3 yolks and now we have cookies for days!!! I didn't have clear corn syrup on hand so I used golden and cut back a smidge on the brown sugar..still came out great. Due to the epic batch size I froze some dough to bake up later..hope it turns out just as great. Love your videos! Cheers from the north 🇨🇦

There's a style of choco chip cookie that my grandmas sister (my great aunt?) used to make. It wasn't the chewy, nor the crispy. They were cake-ish? Dense for a cake, but light for a cookie (almost like a greek wedding cookie texture in the dough, but with flavor). The shape was unique too, like a stout cone or rounded pyramid. She didn't shape them, they just spread different. I have no idea what made them so unique, but I wish I could have them again.
