I buy the softball size ones 🙂 Cheap grocery store balsamic vinegar and brown sugar to caramelize in covered frying pan. Keep a jar full in the fridge and add to everything. I'm thinking of beef liver as I speak... umph, umph...

These won't survive long enough to be pickled, truth be told, this is only a couple of month's worth, they get used in everything from cheese sandwiches (raw) through hot dogs, shallow fried and then in all sorts of dishes.
