Notes to self/others 1pkg-Active dry yeast 3tbsp less than 110° water to yeast .5 tbsp sugar to yeast .25tsp salt to yeast Let yeast sit 5-6min 1.5 stick soften butter 3 large eggs room temp 1.5 tbsp sugar .75 tsp salt 2 cups ap flour leveled [Add 1-2tsp milk if dough is stiff] [Refrigerate 5-10min if butter melts] Rise to at the most, double- room temp Punch, add flour cover lightly, add weight. Refrigerate and rise to double in volume. Butter pans 475° oven Bake baby brioche 15min Couronne 15-20min Big brioche turn down to 350° 20-30min

It's good) The brioche I made yesterday are very good. However, the one thing is missing in the recipe: the temperature in the fridge for the second rise. I did the first rise perfectly, but then put the dough to the fridge with 10 d.C. It started to slowly rise as it should, but the temp.dropped to 4d.C and the butter in the dough just hardened in the middle of the process. The last hour of the second rise was at the room temperature. I somehow managed to bake the tasty french buns.
