Try flipping it every hour when hanging it. Spray it when ya flip it. That meat was dried out!

You did what I was thinking... Hang the point down instead of the flat! PBC says to do it the other way. Next weekend is my first brisket... I'm thinking I'll follow your lead!

Hey BB, I got the stand at ACE Hardware. It's a campfire grill. Very inexpensive and handy.

Doesn't the flat cook too fast (dry out) since it's so close to the coals. Seems like the flat would get done so much quicker than the point.
