Used all the information I learned from TRoy to do a 7 lb brisket flat today on my 18 1/2 in Webber using the SnS Charcoal basket for my grill. It doesn't have a water pan so I just used a disposable aluminum pan filled with water. Pulled it at 212 degrees after 6 hours at 300-325 degrees. It was awesome. Great to see you back out on the patio! Your brisket looked awesome. I've been doing mostly hot-and-fast briskets lately, but today I decided to go low-and-slow for a brisket I'll be serving tomorrow. Sometimes it's good to get back to the basics.

Hey Fred, I actually do prefer the low & slow cooks because I get to relax and smell that great BBQ cooking for a longer time, but when you don't have much time for a cook, hot & fast will definitely work. I appreciate you watching!

Man, I absolutely love the Royal Oak XL Cut! I've been using it for the last couple of months for smoking and grilling, and it is fantastic. Burns hotter, burns longer than their standard lump, and overall is a really great charcoal.

I was so happy to see this video! I bought a huge offset smoker when I first started and it was just too large for the cooks I do. Looked at WSMs and couldn’t make my mind up between the 18 and 22. I smoked my first brisket this weekend on my Weber Kettle. It turned out great, but man I have to look into that slow n sear! I have the baskets but that water pan must be the ticket. I was so happy to see you fit an 11 pounder on there though, because I only bought a 5 pound brisket because I was worried about fit. Looks like I’d be fine with at least a 9-10 pounder. As long as I’m only smoking a couple racks of ribs, two butts or a single brisket, I think I can use this method for just about everything!

I made this last week! Thanks for the video, you inspired me to make a hot and fast brisket on my weber 22" kettle. It turned out fantastic - especially after letting it rest for 3 hours. Bottom bark was a little tough before it rested because I don't have a slow and sear, but I'll use your brick advice next time. Thank you T-Roy!

Just wanted to say a massive thank you. Just cooked my first ever smoked brisket (after watching almost all you’re videos 😂) i have a bbq/grill/smoker I got from a store here in the UK and gave it a go using this same method and it worked a treat. Think I might get a proper smoker next as trying to get it to stay within 225f and 250f was a nightmare! It was only a 3.5lb and toke around 7h but it was beautiful. Thanks again mate now I’m off to look at a new Weber Smokey Mountain 😂

Looks good, I like Worcestershire sauce on meat before cooking. Looks really good. HEB is my store here in San Antonio so I'll be looking for that prime brisket as soon as my Weber Summit Charcoal grill arrives in the coming week or so. Keep up the great work.
