One thing I notice in these vids is that no one uses the white bread to make a little fold over or a taco. That is another dimension of the experience that people shouldn’t overlook. Some brisket, pickled onions and a little sauces folded into a slice of the bread. Chefs kiss!!

I like that regions have different foods that they specialize in. Makes traveling special and worth it. I remember going to NY and asking for tea and getting hot tea! I had never had hot tea, I grew up on iced tea. Also, no one had Dr. Pepper b/c it wasn't sold in the north. I miss those days...if that makes sense. Nothing is special anymore. You can even get Tex-Mex in the north!

@@projectkj7643 There is still regionality. I’ve had Tex Mex in the Northwest and Northeast, it was shockingly bad. Like, very very very bland and very very stale. I couldn’t believe it. Being from Texas, I was shocked to see people eating it smiling and acting as if it tasted good. And that’s because both times I went to a restaurant with great reviews. Holy moly was it so so bad by Texas standards. However, those regions did other cuisines way better than Texas. So regionality still exists.

Kabir, everything is so much more expensive in New York than it is here in Texas so you’re really not saving any money. Our BBQ is the best and if you like Mexican food TexMex is outstanding. If you were to come the end of September thru the later part of October could go to the Texas State Fair and try all the foods there. You could go to a rodeo and check out the Ft Worth Stockyards and see a cattle drive with longhorn cattle. People come from all the world to see that. There’s so much to see and do here including going to San Antonio and seeing the River Walk and The Alamo. You’re not in just one city paying high prices every where you go.

Kabir, the "orange" bbq sauce most likely has mustard in it. We have tomato-y sauce (can be sweet or spicy), and mustard-y sauce which is usually a bit more vinegar-y, although some people like it sort of like a honey/mustard. Everyone has a different recipe, and everyone likes a different sauce, lol. And there probably ARE more green sides, they just didn't get any of them. (I think you're referring to collard greens)

They asked us for recommendations and while Terry Blacks is award winning, that's the one place everyone agreed they should go. In the JOLLY video I think, they mentioned that they use the leftover cuts of the ribs or brisket and stuff to make their sausages. They do have green beans. They do include current pricing on their online menu but they price by the pound.

Most BBQ places that make brisket also make their own sausages with the brisket trimmings. Honestly sausages are a great way to test how good a BBQ place is because they're usually one of the less expensive things on the menu so if the sausage is top notch most everything else will be as well.

You can find barbeque of that level in any hood in the south. protip if you go to a BBQ joint and feel comfortable eating there its probably not very good. You should feel unsafe standing in line. On a more serious note what is BBQ is totally different depending on what part of the country you're in. Texas is all about the brisket and beef. The southeast is about pork most of the deep south is spareribs, midwest is more baby backs carolinas are about pork butt/shoulder. The sauces also differ regionally. From mustard based to vinegar based to ketchup based and even white sauce in Alabama. and yes sir you are right collard greensis the proper side for bbq

When you go to Terry Black's , do get some of the pork ribs as well as the beef ribs they are both different and they are both incredibly good. If you get the small family pack which feeds 5-6 it is 3 pounds of meat and 5 pints of sides for $140.00 U.S. I think they smoke their brisket for 12 hours, I am not sure on the rest. If it is just one person, you can go much cheaper but I would suggest that you try one of each of the meats but taste the turkey first because turkey is a milder meat and while theirs may be the best you will ever taste, after fatty brisket, sausage and ribs, it might seem a little bland to you. Shop around on your flights because Texas is a Hub so you can sometimes find really great deals particularly if you book 6 months in advance. Turkey doesn't have to be dry, I cook it and it is never dry. The trick is to get a fresh turkey, not a frozen one. Brining it or smoking it will also help with keeping it moist but I generally just roast it in the oven , baste it every half hour and it is always juicy. I am not a fan of white meat but when I make my own, it is delicious plus, I usually make a gravy to go with it so extra flavor there. I think with all the fat in that meat, you would not be constipated, you would probably be wise to stay near a bathroom because your system would be well lubricated. Drink lots of water too, which you will want to do since smoked meat tends to make most people thirsty. Collard greens are usually filled with meat too, so while the greens may help, the pork in the greens may not be as forgiving.

Mr. H tried smoking a brisket in 1 day. It took him around 12-14 hours to do everything, and he said it was good but not as great as what they had in the US. I don't think they understood that restaurants like this will season their meat for 10+ hours, and then smoke their meats for around 12 hours as well. All Brits fall in love with BBQ, but I don't think they truly understand how much time and effort goes into making really really good BBQ.

Kabir, if you order the vegetables such as the coleslaw, greens or green beans, you won’t have the constipation problem Christmas time in our office there used to be a lot of food going around. We will get food from companies we dealt with from the outside. Once it sent us a tray of dried fruits. After eating all the other goodies that would clog our system, one coworker and I started eating the prunes and apricots that came with the dried fruit tray. Wanted to make sure we didn’t have any problems later on.

Different regions of the south have different styles of Bar-B-Que. I live in a triangle of west Tennessee where every BBQ joint only does whole hog. They split an entire hog open and cook it over hickory coals for about eighteen hours. The triangle is between the cities of Jackson, Lexington, and Henderson. One place, near me, will cook twenty entire hogs on a holiday weekend.

Traditionally burnt ends are called that because it looked like it was on the fire (pit, grill, etc.) too long and appeared like it was burned. It used to be pieces nobody wanted, and the cooks would keep them, and eat them or use them in other recipes. Then, the truth got out about how good it was, and its popularity exploded. The rest, is history. I live in Texas, and when I was a kid and went to visit my grandparents on their farm, I remember this and never wanted it because of how it looked, and one day my grandpa basically forced me to try it, and have loved it ever since.

Brisket is full of connective tissue which makes it tough. Smoking it for 12 hours converts it into gelatin, so no spraying is necessary, the moisture comes from within. As for turkey, fully cooking the thighs will dry out the breasts if cooked together. That Dude Can Cook shows how he separates the bird and cooks the breasts to a lower internal temperature than the thighs so that all of them are juicy.

Every southern state got they own style of BBQ, and each one says theirs the best . They're all good. And you eat BBQ with your hands , don't be using no forks or knives. Forks are for the Mac&cheese, coleslaw, potato salad, and green beans or baked beans. Don't forget the hot sauce though !!!

Texas is known for their Beef and Sausage BBQ first. Many barbeques were reticent to offer sauce for decades. Anytime a Beef rib is available, it is my first choice. After that, Half lean, half fatty brisket and hot links/smoked sausage.

Smoke normally comes in from a side compartment where the wood is burning, and the burnt end is the side of each piece of meat closest to where the smoke comes into the grill. So, it gets the most exposure to the smoke coming in before it just flows over the meat towards the vent. Normally I only use BBQ sauce when it's a BBQ sandwich just so the bread doesn't dry out my mouth too much. Otherwise, good BBQ doesn't need sauce unless it's just poorly cooked.

I was convinced they were trying to say that meal would qualify for a last meal request without actually saying it. The best bbq joints make their own sausage in part from the trimmings of their brisket and ribs. And that makes a huge difference besides the low n slow smoke cooking. My dad's favorite birthday dessert was his mom's peach cobbler recipe, so don't underestimate that.

Ya know K, as laid back as you are, you'd be right at home in the Southern states. The whole coastal region, from Texas to Florida, you'd love it down here. I hope you get to make it over here some time. No spraying. That'd wash the rub off. There's moisture in the smoke. As to turkey, I'll never deep fry or bake when I have access to a smoker. My smoked turkeys will run juice out of them when you poke with a fork after 5hrs in my smoker. It'd the only way to do it. And no, youre not likely to get stopped up because that meat is nicely marbled....fat is a natural, well, you wouldnt be constipated. Dipping sauce is great for lesser bbq that is still good, but not top shelf. Really good bbq, even steak, for that matter, doesnt need sauce.

Jalapeño and cheese sausage is AMAZING! Rudy’s in Texas does a wonderful job with their sausage. The Original Q Shack in Durham, NC has a delicious jalapeño and cheese sausage that they have custom made for them. The Q Shack is just as good as any of the Texas BBQ places. Yes, I can make that statement because, I’ve eaten at a LOT of “smokehouses.” I don’t like the taste of cooked peaches, and the banana pudding is a cold one. Finding a place that uses cooked pudding to make their banana pudding and tops it with meringue is worth the effort. It’s a totally different experience from the cold banana puddings.

"Burnt ends" are the bark around the meat. They take the dry rub and while cooking the meat gets sprayed every 30 minutes with a mixture of applecider vinegar and water .... it builds up the crust on the meat and seals in the flavor and juices. Briskets, Turkeys, ribs and sausages all get smoked there ... DAILY.

No, the meat is trimmed and the rub put on. Then it goes into a walk-in cooler for 12 hours. In the early morning they're put in the smoker and cooked for 10 to 12 hours or more. After that the meat is wrapped, and rested for at least 4 hours in a warmer. That allows the meat to finish cooking and tenderizing.

I’d say that tray probably costs $150. We just did a Texas trip where we went to Goldee’s BBQ and for 6 of us we spend over $230 for our food. You really haven’t lived till you’ve had Texas BBQ. Literally some of the best food I’ve ever had in my life. Terry Black’s also has really good green beans as a side. Wouldn’t typically get green beans with BBQ but I was very surprised how good they were.

Turkey has a tendency to be dry when you cook the whole thing at once, like for Thanksgiving. If you cook smaller cuts, it's much easier to be confident that you're getting it done to a food-safe level, without drying it out. Especially if you have a proper meat thermometer. They have a lot cooking at once because this kind of barbecue takes hours and hours to cook, so pretty much everything they're going to serve for the rest of the day, is in the process of cooking. However, the "twelve hours" that you heard in the video was not cooking time; that was time that it spends "in the walk-in" [refrigerator, at probably 40 F] after they rub on the seasoning, before they take it out and start to cook it. So they probably rub on the seasoning in the afternoon, stick it in the walk-in refrigerator, and then one person comes in early in the morning to start the cooking process; and that guy probably leaves by like 10am, because by then he has put in all the meat that's going to be cooked that day, and there's likely a different person responsible for taking it out when it's done.

The grandsons tried to franchise but got into a legal dispute because they wanted to use the Blacks Bbq name. They lost and called their place after their dad Terry. They consider themselves competitors now. There is only 1 blacks bbq which has been open for like 95 years, & they consistently win best bbq in Texas year after year, beating out the grandsons especially when it comes to brisket. Blacks BBQ in Lockhart is the original and the grandsons have a restaurant directly across the street. They are 2 different restaurants & have different employees & different owners.

@@monicaking7793 yeah I moved to Texas 3 years ago and stopped into Blacks and asked an employee if the bbq joint across the street was their’s too and they were quick to tell me the whole story. lol, but I did look online about the best bbq in Texas and found a publication on awards of who’s the best and Black’s consistently comes in first always edging out Terry’s, especially when it comes to the brisket. The only difference I can tell between the two are that Terry’s tends to be a little dryer depending on what day you show up, where as Black’s is always incredibly tender. Both spots are good and have almost the exact menu, but they each have their own recipes. Both are pricey as hell though.

if you Google, Austin and Dallas are the two cities, menus are online small family packs (do not include beef ribs) 3 pounds of meat 5 pints of sides serves 5-6 people base price is $140. Now I don't know about tips or tax in Texas not my state

The secret to having the peach cobbler a la mode is similar to eating a pie with ice cream... The cobbler must be hot, so when you put the ice cream on it, it basically turns into a thick sweet cream running down the top and sides of the cobbler. You're welcome. Haha

Go to Prairie Fire in London. It's Kansas City style BBQ and the owner is American. Jolly went there and loved it.

Go look up Prairie Fire in London. The guys from Jolly ate their once. It does TX BBQ.
