I’m a wine and spirits educator in the US, and going to clarify some things. Whiskey - spirit distilled from grain at less than 95% alcohol. Bourbon - whiskey made in the US (not just Kentucky) from a mash of at least 51% corn and stored in charred new oak containers. Tennessee whiskey - essentially a Bourbon produced specifically in Tennessee and filtered through sugar maple charcoal. (One producer exempted from the sugar maple filtration). The process IS intense, and I recommend the JD distillery tour to anyone going through Tennessee. Even if you don’t love JD. Haven’t been to Dickel or the others though.

I'm probably too late to be helpful, but thought I might offer some clarification. Whiskey/whisky is a broad category, including Scotch, Irish whiskey, and Bourbon. Bourbon is the most popular American whiskey, which has a mash bill of at least 51% corn. For more bite, you might try a rye whiskey, using more than 50% rye instead of corn. I haven't read all of the posts yet, but the vast majority of the recommendations have been bourbon. Jack Daniel meets all of the legal requirements to be a bourbon, but they've added charcoal filtering and named it Tennessee Whiskey. Many people think of Kentucky for bourbon, and they wanted to differentiate themselves. Having said that, bourbon is made all over. For example, Black Button in Rochester NY makes a pretty solid bourbon using local ingredients.

Actually Jack Daniels is a bourbon. It is not a Tennessee bourbon. A bourbon only requires a certain way of being distilled. Two requirements are 1. That it be made of at least 51% corn. 2. That it be aged in new charred oak barrels and 3. That it does not contain any other flavorings or artificial coloring other than what it gets from the barrel. To be certified as a “Kentucky Bourbon” it has to be made in Bourbon County Kentucky.
