Sometimes they HAVE to talk over stuff because otherwise things can get flagged/blocked/striked. By talking they provide commentary and "add" to the video. And at the end of the day they're reacting to what they're watching -- and that includes talking with each other and enjoying the moment instead of being robotic and boring.
