You guys didn't pay attention to any of these geography videos at all if you think California is extremely hot in the summer. It's Mediterranean weather. It was colder in San Francisco than NJ when I visited in August.

As someone that grew up in Mississippi, lives in Texas, and has been to Louisiana about a million times I can tell you that I am usually pretty disappointed in the seafood when I travel to other places. Gulf Coast seafood can not be beat and you cant imagine how a good bowl of gumbo will change your life if you’ve never had it before.

As an Okie. that lives out west . Gulf coast is king. The east coast is ok, The west coast sucks. Even what they call "the best burger" is Terrible. The Butter Burger from Wisconsin wins that.

Gumbo has been around longer than 75 years. I think she was saying that particular family recipe is 75 years old.

Yeah. I mentioned that in another post. There are printed records of gumbo in Louisiana in the later 1700s. I think the trend toward roux instead of filet or okra is more recent.

Hi guys! Louisiana Cajun here. I've never been to her place, but I don't get around to New Orleans that much. In New Orleans they put tomatoes in their gumbo, which you don't in Cajun gumbo, but they both taste good. You should also try etoufee and jambalaya. You can make gumbo with almost any meat or seafood but most folks don't mix the two. This time of year I like chicken and sausage gumbo since most seafood is out of season. The foundation of any gumbo is the roux. It's made out of about equal parts flour and oil, which you must constantly stir until you reach the degree of brown you want before adding your vegetables and water. If you're not paying attention, you can burn it and you have to start over.

I just wrote something similar. The jambalaya I most commonly make is Donald Link's (he runs a couple of excellent restaurants in NOLA) recipe which is a Cajun variety and has 1 tsp of tomato paste in the entire pot. I'm sure you could even leave that out and not notice.

James, I’m from Louisiana and I don’t eat seafood either. Chicken and sausage gumbo is just as widely available as seafood gumbo and it’s delicious! I know you wouldn’t have much trouble finding a decent gumbo in east Texas either.

I love seafood, but I prefer when gumbo doesn't have it. What's also good is when they put duck in the gumbo. For seafood type stew and soup, I'd go with shrimp creole or crawfiah etouffe

@billbrasky1288 I agree on southeast Texas and Cajun (more so than Creole) food. I live about 10 miles from Cameron Parish with my father’s side of the family from southern Louisiana. I worked for several years with a Cajun who was born and raised in the southwestern Louisiana bayou country and he used to joke that there were more Cajuns in Texas than Louisiana. I didn’t know it but he said, I am sure correctly, that there was a huge migration of Cajuns into southeast Texas during and particularly after WWII from the oil and chemical boom and the dozens of new chemical plants. I just made chicken and sausage gumbo a couple of hours ago. I used Savoie’s sausage which is no big deal except knowing how to pronounce it. 😂 So we know how to pronounce Hebert, Trahan, Hollier, LeBlanc, Tullier…… and maybe as important, Atchafalaya…. 🤣🤣🤣

​@@tvc1848I use Veron's in mine but that's mainly because most of my family (from St. Charles Parish) is averse to too much pepper. I have to "import" it from LA whenever I go home because I can't find it (or Savoie's) in central MS where we're living now. Usually, the best andouille I can find up here is Richard's so I'll use that when I don't have Veron's on hand. Also, I have a shellfish allergy so it's 100% chicken & andouille gumbo for me (w/ some filé sprinkled on top).

Louisiana born myself and I'm a chicken and sausage gumbo fan myself. I personally don't eat seafood. I have tried shrimp several times but I just can't make myself like it. And hot sauce is a must on it of course

My mother was born in New Orleans and I've learned to cook gumbo, jambalaya and etouffee. Also do seafood boils occasionally when I have family over. It's good to learn those things because Cajun and Creole food are next level and a deep tradition that originated here in the US and we take pride in our traditions like this.

She said her family's gumbo recipe has been around for 75 years but Gumbo been around for a long time. It started in Africa and was brought to the United States centuries ago and became infused with African French and Native American Cuisine in Louisiana.

Yeah when you think of Louisiana Gumbo you thing of the Holly Trinty that makes it what it is. There is no one way to properly make it but you all start off pretty much the same way.

That's not accurate. Only the word "gumbo" may have originated in Africa. Scholars think the word "gumbo" is a deviation of an African word meaning okra. But nobody really knows where the word comes from. The dish itself started in Louisiana most likely as a deviation of a french dish with influences from other cultures.

@@barnabydodd8956The word gumbo is definitely derived from an African Bantu language. ki ngombo means okra. If you look up how to say okra in French it will say gombo. Actually the word okra is also derived from an African language. The origin word is ọ́kụ̀rụ̀ in the Igbo language. In Cuba there is a dish in Cuba (which also has African slaves) called quimbombó which is an okra stew.

Coastal California, where the major cities are, is NOT hot in April or usually in July/August. If you are coming to anywhere near the beach, bring a jacket or sweatshirt at least. It can be in the 60s Farenheidt . . . sometimes with a damp wind. And the rainy season in Northern CA can last into April.

Southern California/ L.A. can be sunny, mild and in the 70s in April/ May/June, but foggy in the mornings and in the evenings. We heat up at end of July into August and get really hot in September and October. Northern Cal can be a bit cooler in the Spring and Fall.

Louisiana is a mix of a lot of different cultures. You have African and Cajun french. They do love their spices down there.

Born and raised in northern Louisiana and I can attest that Louisiana cuisine is like none other. We believe in spices and appreciating our food. That fried chicken and shrimp looked so good. Everything looked and probably tasted amazing. I can’t wait to go back to Louisiana.

3:59 the 75 years remark was how long THIER recipe for gumbo has been around. gumbo itself has been around for HUNDREDS of years, and each family has their own way of cooking it and most even have a 'secret' recipe. additionally, people in the Southern coast, especially Louisiana have spent several hundreds of years learning how to cook the seafood that they could catch and how to make that seafood taste really good. surprising other places don't seem to care much on making it taste good, just edible. While Louisianans have strived for great taste and not JUST edible. add to that Southern food isn't made for looks, just taste. so most food will look bad, but once you try it, you'll love it. Also, we (Louisianans) know that most people that don't like or just don't care for seafood quickly change their minds once they come eat Louisianan food. I hope that you both get the chance as well.

First, I love the idea of you guys coming over to explore America. You are most welcome. Second, I find it odd that someone who lives on an island doesn't care much for seafood. It doesn't seem like a solid survival adaptation, to me. What's wonderful about Creole and Cajuns are the mix of cultures and foods that created something truly unique. They looked around and discovered the ingredients and adapted their cultures to what was available. For example, instead of mire poix, which is onions, carrots, and celery, they had to make the change to the trinity. Onions, celery, and bell peppers (a pepper that matches the sweetness of a carrot, it's not piquant). As for gumbo, it's a thick soup, and can be divided into two categories. Gumbo thickened by okra and thickened by Filé powder, made from baby sassafras (a tree) leaves. Most everyone has a favorite. If you get to Louisiana, I recommend trying some crawdads. They're a kind of freshwater shrimp. Lots of dishes are made with them because they're a plentiful source of protein. Just a couple of thoughts.

A lot of americans from big cities truly do enjoy everything! I myself am one of them as a korean born and raised in los angeles, I've been very fortunate to diversify my palate from a young age! My childhood friend group from my neighborhood consisted of a Mexican, Filipino, Nigerian, Chinese-Peruvian, African-American, Egyptian, Korean (myself) and a Polish kid. Got to try tons of food growing up and not even including the general diversity in the city itself. Haven't tried a food i haven't enjoyed!

If you haven't had seafood outside of the UK, you should try it here in the US. Apparently, we do it very differently. One thing I've done as I've gotten older is just try things. If you don't like it, it's okay, but at least you've tried it. Gumbo is AMAZING, and you can eat around the parts you don't like. Definitely don't come to the south in August - it's way too hot. Come in the spring or fall, for sure. Also, it annoys me when they skip over the mac and cheese, too.

Me too. Crystal is the best hot sauce and the one you'll find on nearly every NOLA restaurant table. It's not as hot as some others and has more flavor.

I love New Orleans/Louisiana cuisine! There are a lot of Louisiana transplants or people whose families moved here from New Oreleans here in the Bay Area. So there are a few restaurants here that serve New Orleans style food. I really enjoy it, up there with other Southern food and with BBQ

Beesleys, what is pretty cool about the US is that it seems like every state or region has their specialties when it comes to cuisine i feel thats one thingthat makes the US so unique. I live in Georgia ( the united state, not the country) close to a military base and just the different ethnicities is pretty amazing. We have Jamaican, Latin, Korean, German, Mexican and even Thai cuisines in the military town i live in. Granted we do have a lot of the chain restaurants, but the lesser known or the mom and pop restaurants usually show the foreign cuisine very well. You've made a mention of wanting to come to the US in April. Id say that by then, the temperatures usually become more mild in our springtimes with flowers blooming . Along the southeast coast from Louisiana to Georgia and the Carolinas have some pretty amazing historic homes and buildings going back to the 1700s and very nice scenery. I enjoy your videos.

I grew up eating southern cooking. My mom who was from SWFL was a great southern style cook. When I married my wife was a black woman who grew up in a tiny town in Georgia. She cooked what is commonly called soul food. It tasted almost exactly like my mom's cooking. I grew up eating Collard greens and black-eyed peas, country fried chicken, pork chops etc. My wife cooked the exact same foods the exact same way down to the seasoning. So essentially soul food and southern cooking are the same thing. My mom did a fried steak that I've never seen anyone else do from any style cooking. I know basically how she cooked it but while I can duplicate most of her cooking that steak is one thing no one else has ever even come close to. It's been almost twenty years since I've had that steak and the gravy she made from the drippings. I miss both. You have to be able to cook that steak in order to get the right stock for the gravy. Hopefully my mom will be cooking in heaven when I get there, cause that steak was heavenly. lol

To the fish and chips point. Catfish is a very different flavor profile than the fish that is normally used for fish and chips in the UK. Catfish are fattier than most other fish, so that adds to the flavor. Combined with the spiced batter and it is a heavenly combination. Catfish is my favorite, with a close second of smoked salmon.

They had some delicious food in New Orleans, we vacationed there twice during the winter months, we had a positive experience when we went in December, we went back for the second time just for the food! One day we'll go back again for some more food flavor experience! I know what you mean mixing meats and seafood, at first that sounded weird to me too, but I tried it, and I was blown away! New Orleans makes food you've never had before TASTE SO GOOD! Don't worry about the Mac & Cheese Millie, I can honestly tell you that too will taste better in New Orleans, I would know along with many who have enjoyed it there. I encourage you to give everything a try Josh and Ollie enjoyed should you have the opportunity to make it there one day. ☮ and 💕

New Orleans and Louisiana foods are very different from any other place in the USA [google tried to give me world, which could be true] because of the Cajun and Creole influences. Even something like Gumbo is going to be different depending on whether you have a Cajun or Creole making it. And both are delicious.

Gumbo often has shrimp and crab which are pretty easy seafood. It CAN also have crawfish, which can be an acquired taste.

Those guys are so fun to watch. I always laugh, and their chemistry is perfect. I have watched several of their videos multiple times, and I still laugh. April is a great time to come to the USA as far as weather goes, but only in the Southern States. I live in North Florida now and was in Texas for 10 years prior, and April is about as perfect as it gets temperature wise. I wish people explored more areas than just NY, TX, and CA..The urban/touristy areas are fun, but there's so many other amazing places to travel to besides.

Just a little FYI: File’ gumbo won’t have okra in it and Creole gumbo will. Every restaurant and indeed ever family, has their own gumbo recipe and they all steadfastly believe theirs is the best😂 It’s a matter of personal preference which one a person likes.

Gumbo and Jambalaya BOTH have non-seafood versions. If your US travels leave Texas and continue in New Orleans don't worry. Just get sausage and chicken versions. They're still great.

I've never had the seafood gumbo. My family always makes the chicken and sausage gumbo. But the rest of those dishes I actually have had and they're all pretty good

Just to let you guys know when it comes to gumbo every place makes it different. They change the ingredients and some naked thin like soup and some make it thick. They all have the basic ingredient rice, sausage, seafood. But no matter where you go it's always good and spicy

Crystal's hot sauce goes really well with seafood because of the chili peppers that they use. It isn't about the heat, it is about adding flavor.

I live in Texas, so I would love to say come here, but you could go to Northern California almost any time and not have weather issues. San Francisco is best in October. Actually, warmer than summer and mostly dry. If you are going to drive the coast, the coastal breezes keep it cool to mild.

You guys should check out the video they did on their first crawfish boil. They were confused as to what was going on with all the food being brought to them, but they figured it out after awhile.

As someone who lives in Louisiana you wont find seafood done the same way in any other place unless they grew up there. Others try but they just mess it up.

I’m not a fan of seafood myself, but love the flavor of gumbo, and love the jambalaya… but my absolute favorite is Candied Yams…. I bake a fantastic Candied Yam casserole every year for Thanksgiving…

Crystal hot sauce is amazing. I always have it at home and put it on everything. It's not very hot.. like a 1.5 on a 1-10 scale...lol

California: Partial to Northern California, San francisco, alcatraz, muir woods, Redwoods, Tahoe. Though in Southern Cal, san Diego is nice. Texas, san antonio is a must. Trip over to New orleans.

Gumbo has been around for another 200 years. That is especially true with okra or filet gumbo. With roux which if the most common way now? That is relatively newer.

Cajun/Lousiana food is just a different breed (spices and such). Jambalaya is one of my all time favorite foods. I am not a seafood fan at all, but I love a clamchowder/Lobster roll, shrimp in general, calamari, and fish and chips but that's it. Now Seafood in Louisiana vs say Maine (I've visited Louisiana once but have that sort of food whenever I can, but it's a different genre of seafood and it's great. If you're looking for your Clam chowders, your lobster rolls, or a different species of fish for the fish and chips or things along those lines....Maine is probably your best bet for the best kind of food like that. Best thing about this country you can find the "same" thing but it be vastly different regionally and it be like 2 completely different meals you can love equally.

I'm one of those people that likes almost everything that's edible. I love British food as well. The first time I made beans on toast I loved it and still make it. Though it's difficult to find canned beans here in America without gobs of sugar in them. I usually make my own homemade beans without all the added sugar.

Great video reaction! I've only had real gumbo once when I was 13, and I was sick for days afterward. This was when I discovered that I was allergic to shellfish. Oops? Jambalaya is awesome though. So much food you all should try! Louisiana is next to Texas, maybe hit them both? I still say come to East Tennessee where I live so you can go to the most accessible National Park, the Great Smoky Mountains National Park. 😀

Her recipe of gumbo has been around for 75 years. Gumbo itself has been around for over 300, longer than the country of America.

Yes,u guys are right, they should have tried the mac-n-cheese because everyone makes theirs different. It might be super creamy & have different cheeses in it or it might be a dry texture but have a great taste & I've tried Mac n cheese in a fancy restaurant & it was awful & tried it in a some little walk up window or a random food truck & it was fantastic & I bought a big to go box of it to take home. Some people add extras like bacon or diced ham which is probably my favorite but u never know unless you try. U can always spit it out in ur napkin 😄 it looked like Josh & Ollie were drinking sweet tea with the awesome Southern Soul Food they were trying. I do like sweet tea but not too sweet & I always want it with 1 or 2 lemon or lime slices in it. Plus we have flavored teas too like my favorite mango, peach, strawberry is really good 😄😍🥭🍑🍓🧊🫖🥤💜🙏🍑

I'm from Louisiana and have had great fish and chips in the UK. I've had both cod and haddock, and it was super fresh and crispy. Cooked perfectly. But I have to be honest... the batter is a little bland if you're used to Louisiana fried catfish. If you just added some spices to the batter (and I'm not talking spicy as in hot), you would take your fish and chips to a whole new level.

If your thinking April then think of Colorado. If you go to Denver you have all the suburbs as well as going up to the mountains. Then if you want to visit Wyoming your only 100 miles give or take a few miles depending on how you drive there. We might even have snow on the ground.

I have lived most of my life in south Louisiana and spent time/lived in around 27 or more states all over the country for work. I have tasted good food in all of them but for great food there's literally no place like home!

Jambalaya is a one pot meal. It is easy to cook. There are thousands of recipes online for Jambalaya. You can put any type of meat you want and you can make it as spicy as you want it.

👍🏼 I think most Cajun or Creole dishes are one pot meals or certainly the more popular ones associated with the cultures. Gumbo, sauce piquant, shrimp creole, étouffée, jambalaya, court bouillon……

My mother and grandmother are from New Orleans. We have a family oyster dressing recipe that looks similar to theirs. Also, we can remove the oysters and make a turkey stuffing out of it for Thanks Giving too. Southern dressing is awesome. Most bases are a mixture of beef,sausage and the trinity. yum, yum and yum.
