In the warm, sunlit kitchen of the H family home, the scene is bustling with sweet excitement. Mrs. H, a woman with a cheerful smile and a flair for baking, is in the midst of creating a mouthwatering Gooey Butter Cake from scratch. She is accompanied by her adorable little assistant, Baby Elana H, who, despite being just a toddler, shows great enthusiasm in helping her mother. Elana, with her hair tied in a cute little ponytail, armed with her apron and chef hat, giggles as she clumsily tries to stir the thick, golden batter.
The kitchen is filled with the comforting aroma of baking cake, The countertops are adorned with various baking ingredients: bags of flour, sugar, vanilla extract, and eggs. A large mixing bowl takes center stage, where Mrs. H expertly combines the rich, creamy butter with sugar, creating the perfect base for their cake. She explains each step to Elana, who listens intently, her bright eyes wide with curiosity.
As the cake bakes in the oven, Mrs. H sets up a small tasting area on the kitchen table. She places three colorful plates, anticipating the moment they can all try the cake together. The timer dings, and Mrs. H, with oven mitts on, carefully retrieves the golden, bubbling delight. The top of the cake is a perfect golden brown, with edges just pulling away from the sides of the pan, promising a gooey, delicious center.
Just then, Mr. H enters the kitchen, his timing impeccable. His eyes light up at the sight and smell of the freshly baked Gooey Butter cake. "Taste Test Time" , causing Baby Elana to clap her hands in excitement.
Together, they gather around the table. Mrs. H, with a proud smile, slices into the cake, revealing its lusciously soft and sticky interior, which oozes slightly, living up to its name. She serves a generous piece to Mr. H and a smaller, manageable piece for little Elana. The first bites are met with approving murmurs and wide smiles. The cake is perfectly sweet, with a dense yet buttery texture, complemented by a slight crunch from the sugary crust.
"This is AMAZING!" Mr. H exclaims, his eyes twinkling with delight as he takes another bite. Mrs. H laughs, her heart full, watching her family enjoy the fruits of their baking adventure. This moment, filled with laughter, sticky fingers, and cake crumbs, is a snapshot of pure family happiness, centered around the simple pleasure of a homemade Gooey Butter Cake.

Best way to do this cake is to make your cake mix to be about the same consistency of a biscuit mix. Then you press the dough into the bottom of the greased pan. Then spread your cream cheese icing on top of it and then bake. Also the correct name for this cake is Chess Cake.

When this recipe calls for a cake mix, it means only the DRY ingredients of the cake mix. Blended with the butter it becomes more like a dough and the cream cheese mixture will sit on top of it. Just lost in the pond again! lol It still looked yummy!!

I thought the same thing... Cake mix is the dry ingredients, cake batter is after the wet ingredients are added.

@@genejohnson2144 Most cake mixes come with some sort of egg-like substance (I believe lecithin). I seem to recall hearing that you could just add milk and/or oil to many of the prepackaged cake mixes and they would still bake up well enough, and that the egg requirement was more to make the customer feel like they were contributing something. Just adding the dry ingredients from a scratch recipe might not work the same. I'm sure one could find a recipe for "cake mix" online somewhere though, probably just dry ingredients with a bit of powdered egg.

@@FriendofWigner Yes I did hear that story as well about market research from the cake mix company showing that the end user wanted to feel like he or she actually "worked" on the cake by contributing fresh eggs.

My Mom used different flavored cake mixes to make rhis cake. That allows flavors like orange, lemon, strawberry or cherry to be introduced with no extra effort.

A store bought cake will be much firmer of course but for a homemade cake I'd say it's pretty close. Glad you enjoyed our little treat. There are many flavor varieties in St Lou. Seeing it with powdered sugar on top is common. (St Louis native)

The recipe I use calls for the yellow cake mix but it is not made to the directions on the box. Instead you mix it to minimal ingredients to make a press in thick crust then top with the cream cheese mixture and back. 1 cake mix 1 stick (8oz) melted butter 2-eggs 1-teaspoon of vanilla mix together and press into pan the make your cream cheese mixture pour over and spread over the top of crust, bake all together. It will be thinner and when done needs to coo a little before serving. But I know yours tasted good. The powdered sugar is the right amount. When you put your hand mixer in the bowl take a damp kitchen towel and cover your bowl and then turn on your hand mixer. Towel will need to be bigger than your bowl. All your dishes look delish!!

6:50 Mix the powdered sugar in by hand until it starts to incorporate. Then use the mixer, starting on low speed.

St. Louis! My family is from there, I never lived there, but spent a lot of time there. Favorite things to try there: gooey butter cake, St. Louis pizza, fried ravioli, fried spinach leaves (not battered, just crispy leaves as a starter!) a few Italian restaurants are some of the best in the USA! Lombardi's, franks, and more! So much good food, could spend a week there just getting stuffed!

If y'all haven't yet, y'all should make Tres Leches cake! It's probably the only cake I'll willingly eat. It's a Mexican cake, but anywhere there are Mexican-Americans there is Tres Leches cake as well!

If you take a tea towel and place it over your bowl, turn on your beaters for a couple of seconds then remove and finish incorporating the powdered sugar into your batter, it helps to eliminate the "fly away in the air" situation. As for questioning the recipe.....all I can say is "trust the process". LOL

I introduced yellow cake mix (for a different recipe) to my friend in N. Ireland and because I couldn't find it in the stores, I ended up ordering it on Amazon. I don't remember which brand it was, though. I did try using the white cake mix I found over there, but it just didn't taste right.

Butter cake is absolutely wonderful. It's supposed to be gooey and it sounds like you achieved the right consistency from the way you described it. The frosting is not overdone with that speaking as an American when it comes to cream cheese frosting 8 oz is very scant. I adore cream cheese frosting and I'm not a huge fan at all of buttercream frosting.

No ma’am it is NOT supposed to be that wet. You need to use a box cake mix. I am from Louisville Kentucky and have had it many times. The texture is closer to a danish tastes like chess pie. Has a similar flavor as Buttermilk pie. I think the recipe was off. Any yellow cake mix like Betty Cocker, Duncan Hines. Maybe it wasn’t a good recipe. There are many butter cake recipes. Some people call it Chess bars. It is the same thing. They are delicious but not even close to being that wet😢😊

Mrs. H I think your diagnosis was correct - one side of the cake didn't get as much cream cheese mixture as the other side. I too love this cake. I can see Elana fixing this for her parents later in life! BLOODY LOVE YOU from Tennessee.

When you said "We'll have to make our own yellow cake mix", I thought... "Just the dry ingredients" Then I heard "Milk" in the ingredients and I thought "No, Don't Do It!"... lol. But it turned out better than I thought it would. When you mix in the powdered sugar, you can stop it from going everywhere by folding it into the mix first with a spoon before you use the mixer to fully blend it in. Great video!... It was fun to watch ❣️

YES! I'm in Illinois, metro east and live about an hour north of downtown StL. I don't remember ever hearing of Toasted Ravs and Gooey Butter cake until moving to the area (Born in Eastern Montana and moved to the area from North Dakota). But now I LOVE both!!!

Hope y'all liked it. I was born in St. Louis. Spent the first 9 years there. My Meemaw used to make Butter Cake for special occasions. Really, her's didn't look too different than yours. Sometimes the ingredients don't quite blend together. No worries that as long as it tastes good. I'm in my sixties now and I still remember that cake. Well done Mrs. H. Thanks for the memories. Maybe a tad wetter than usual, but looked delicious. Typically a serving of this is quite a bit smaller than the piece Mr. H enjoyed. And best served alongside some coffee to cut the sweetness a bit. But overall I'd say nice job, especially for doing it by scratch. And if it wasn't sweet enough, it's generally topped with a further dusting of powdered sugar. 🤣🤣

I love Gooey Cakes. They're easy to make and get devoured...lol I make one with a chocolate crust and peanut butter filling. I like a little cherry pie filling on my vanilla gooey butter cake.

When I make my gooey butter cake I use a box cake mix and melt a stick of butter and add it to the dry cake mix. When you mix that it is like a dough, then you press that into the bottom of the baking dish. That will be the bottom of the cake. Then make the cream cheese and confectioners sugar like you did. Then pour that mixture over your dough bottom and bake it. It turns out kind of like a bar cookie cake. I have never seen one done like that where you make the cake batter, but I will have to try that now. Glad you liked it. I love gooey butter cake, yummm.

I grew up with Gooey Butter Cake at every family gathering. It looks like you did it quite well Mrs H. I think it looks quite comparable to what we traditionally have in the Midwest. I love two hours from St Louis where the recipe originated. You did great!!

I've made this many times. The yellow cake mix is the "crust" of your cake. You normally cut in 1 stick of room temp butter & 1 egg into 1 box of cake mix. Then you will have a very malleable dough that you press into the bottom of your pan. I typically press it slightly up the sides to contain the cream cheese mixture. Then mix up your cream cheese per instructions. Pour it into your prepared crust. Finish the recipe as written. Variations: you can swirl in jam or sprinkle chocolate chips or toasted coconut. I have even mixed in a can of pumpkin puree, sprinkled seasoned nuts on top. Hope that helps.

What I do, to incorporate powdered sugar, is fold by hand at first to get the powdered sugar moistened, then use the hand mixer. That way the sugar doesn't billow up and get all over everything.

I'm from St. Louis, Missouri and I've had gooey butter cake lots of times before. I usually buy mine at the store, but in my experience, yours was a little too wet. It still looked good. If you ever come to St. Louis you should buy a gooey butter cake to compare with the homemade one to see which one you like better. You should also try Imo's pizza and Lion's Choice.

I had something very similar to this at a family gathering several years ago, first time I'd heard of a gooey cake. Good stuff! Didn't get the recipe, but I bet it was very similar. Will try this one soon, thanks for sharing.

Next time try a dump cake. You can make them with different kinds of fruit pie filling. It's kinda like the gooey butter cake, but with fruit! They are also pretty easy to make but you'll want to do it when you have some ice cream on hand. Good without, better with!

One of my favorite cakes to make. I have done it with pumpkin and pineapple. There is another version with peanut butter and a chocolate cake. If you look up Paula Deans recipe for this is the recipe that I use.

the longer name of this cake is “ooey gooey butter cake “ which maybe helps describe the texture better? The underdone texture is the ooey gooey part which contrasts with the doner areas.

I'm dirt old, too! I'd go into a store or a library, find a book or magazine and then hand-write recipes on note paper ;-)

If you really want to be naughty and unhealthy, add two or three centimeters of brown sugar on the top of the whole cake as a garnish.

I'm going to keep recommending that you get a heavy duty stand mixer instead of always using the hand mixer. More speeds for the mixing and they work so much better than a hand mixer, plus it'll leave your hands free. Mine, a Kitchenaid, has a Stir speed and I used that all the time making cookies. I think it's probably using the hand mixer that makes the cloud of powdered sugar. I never really got that with the Kitchenaid. Mine also came with a pouring shield that has a chute you can using to add ingredients, but I never used it after the first couple times I tried it. Too awkward and that's when I made a big mess.

@@Mrhandfriends I can only speak for the Kitchenaid, but there are a lot of attachments available for them. I only have a grinder attachment, but they also have one for making pasta, a shredder, and a sausage stuffer, among other things. They are a bit expensive but worth every penny. They also come in almost every color you can imagine. at least in the States Things do get a little awkward with it because I'm left-handed so everything is backwards for me, but I figured out my own system. Plus Little Miss H won't be able to pick it up like she tried to do in this video.

Love this cake. Blue Bell ice cream currently has a new flavor out that has chunks of this in it and it is to die for!

The Blue Bell company FINALLY made it to St.Louis stores about three weeks ago. I'll have to try this flavor if i can find it. So far someone in my house has sampled (eaten every bit 😇) of the butter pecan, vanilla, and banana pudding flavors. I was eyeing the black walnut next, but might go for gooey butter instead. I'll thank you for the recommendation today, but next week when I'm cussing my tighter britches, i might not be so polite!😉

I grew up in St. Louis. My siblings and I always fought over who got the corners of gooey butter cake, because the corners had the best crunchy part.

YOURE KILLIN ME SMALLS!!! My absolute favorite dessert. And yes, yours was a bit underdone…but it still looked AMAZING! Let’s just call it the “EXTRA gooey butter cake”. And Costco has a big pallet of gooey butter cakes this month, but I can’t get one cause I just started a new diet. WAAAHHHHH! 😭 Thanks for making me drool though. lol. 🤤

Great fun to watch! I've only had butter cake once, but it was right about the consistency you've made it, so I think you're spot-on! I'll have to share a couple of family recipes from my grandmother's collection. I'm from Virginia, and the south is home to some amazing food! :D

To avoid the dust cloud when working with powdered sugar, (or flour), i start by gently stirring with a spoon or a fork, until it all gets wet, (or if just mixing butter and powdered sugar, cut it in with a fork, like for pastry), THEN use the mixer.

Being an STL native, my wife makes this for all out of town visitors. It should have the consistency of a brownie. If you’re interested in more St Louis food, research Toasted (fried) Ravioli. Quite the treat! 😋
