The original reason bagels had holes in them was because the bagel sellers would carry them around on rods after they were cooked. Now that that isn't common bagels with closed holes have become more common.

It's possible that you got lox at Liberty Bagels and nova at Tompkins Square Bagels. The difference is that lox is only cured, while nova is cured and smoked. Most New York bagel places put some non-diastatic malt in the water that they use to boil the dough. The malt contains an enzyme that converts some of the starch on the surface of the dough to sugar. This helps with browning, and gives the bagel a crisp crust.

I've heard from several people from the US who have gone to the UK and every one of them has said the tomatoes in England are trash. Maybe you hated tomato because you'd never had a good tomato before.

We agree! Your probably right. The tomatoes in the UK are not very good as the majority of them are stored in Nitrogen and force ripened months later.

Everyone has their favorite bagel place in New York. mine is actually somewhere on the lower east side where Jewish families once settled but have moved away. If you go to Russ and daughters, it’s a much better bagel as they are the bigger importers of fish and meat in the city. Not only that they’re literally right down the street from Katz’ deli. Anthony bourdain frequented that location. Andrew zimmern liked Sarges bagels which is ok but everyone debates about it.

Bagels are dipped in a bath of salt water and baking soda before being baked. The soda is what gives bagels the signature feel of the outside and the soft inside. They are not hard to make at home and are the best.

Supposedly the water is the difference. There are giant aquifers in NY that bring down water from the Catskill Mountains. It's cited as why the pizza is so good too. Also important is the boiling stage. Good bagels are both boiled AND baked. Bad bagels ate just baked. The best bagel is usually the freshest one. EDIT - Okay, your research found most of this out. BTW: Scallion is the name in the US for Spring/Green Onions.

Bagel is a Yiddish word. Jewish immigrants brought to NYC over a hundred years ago, and perfected it. Nothing else quite like it.

I love bagels, but I wouldn't eat them without butter or cream cheese or some kind of lubricating condiment. My brother in law introduced me to bagels with cream cheese and pickles. It's so tasty!

In addition to the water being the primary factor for the taste of NYC Bagels another major factor is the fact that they are always made fresh daily. A place can’t call themselves a Bagle store unless they make them fresh on site otherwise it’s just another deli or bodega.

NYC bagels are better than other bagels for the same reason their pizza is better than other pizzas. It's the NYC water. Something about their water makes the best doughs. I'm not just making this up either, there are legitimate pizzerias and bagel shops outside of NYC that import their water for their dough from NYC just to get that same taste.

I've sensed from watching Brit reaction videos to American food that they don't care too much for tomato on a sandwich or burger. It's not just a salad ingredient here,it's an add on to other foods On their own, tomatoes are rather bland but put it in a sandwich or cheeseburger ,it helps make that food delicious 😋

When I used to live in NY, I would order 2 bagels. The first would be a strawberry bagel with standard cream cheese and lox. The second would be a salt bagel with egg salad. I really miss getting them.

Enjoy, NYCity gets its water from mountain springs in the Adirondak Mountains. It's "soft" not overloaded with too many minerals. You are also correct about boil first, bake second.

@@-EchoesIntoEternity- The Catskills are PART of the Adirondak Mountains. Just walk across the Delaware River (Yes Walk, I only Tubed the Delaware water gap at least 20x) and you are in the POCONO mountains. (Also part of the Adirondak Mountains) .

Much iconic New York food exists because Jewish people opened delis.My dad spent some time in Philadelphia ,which has many similarities, and talked about Jews using Schmaltz( rendered chicken fat).Bagels were originally treated with a lye bath but I think they use baking soda now as a safer alternative.The alkalinity gives them their distinctive texture. Can't wait to see youse guys chowing down on BLTs.

Here’s the thing, anything baked in NYC (bagels, pizza, pastry, etc) is fabulous because of the quality of the water. Many people who own NY-style (whatever) bakeries/pizzerias around the country either get their dough or ship their water from NY.

I stayed in New York for a week last fall, and I stayed with a friend who lived in Brooklyn. Around the corner from them was a place called Bagel Pub...and I swear, of all the places we ate during that vacation, that's the one that sticks out most in my mind. I went there multiple times, and I thought that if I ever lived in New York City, this would be the go-to comfort place for sure.

Schmear is the Yiddish word for the cream cheese itself, not an amount. Bagel are a traditional Jewish food. The cooking process is similar to German pretzels (which are boiled in lye water to form the crust and then baked).

Nothing like a NYC bagel with lox and a schmear! So iconic. It's been over a year since I've had a bagel with lox. My hubby's on a low sodium diet after a heart attack. I know I could still have it but don't want to make him feel like he's missing out. Great video Nicola and Andrew!

Yumm!! Once again you guys find one of the most quintessential items that really represents this particular place. Bagels scream NYC as London does fish and chips and curries. lol... No surprise, all of these bagels looked delicious. I love a plain bagel with smoked salmon, cream cheese and capers. Haven't seen many bagel shops up here in the Pac northwest. I'm sure there are some but I couldn't tell you where?? You guys have really made me realize how very regional many foods items are. Chicago hot dogs, Italian beef, Texas BBQ, Louisiana gumbo and other Cajun foods, Philly cheesesteaks etc.. So just a heads up, don't come here for the BBQ or the Mexican food either. Coffee, seafood, apples, potatoes, blackberries and cherries. And daffodils and rhododendrons. lol.. ♥ Beautiful landscapes.♥ Thanks for a wonderful video. Mila and Rich in Seattle.

Im from Texas and I love bagels. I took an everything bagel cut it in half like a hamburger bun. put it in the toaster put butter and cream cheese on it thick. Then put a juicy hamburger Patty with bacon it's so good. Please try it

The schmear IS the cream cheese 🤣😂🤣 ❤❤❤ You should’ve put some of the maple schmear on it & personal opinion but you don’t toast NY bagels bc they are so fresh!!! Mind you for me anything good from NYC it’s wonderful!!! Even the dirty dogs!!! ❤❤❤

Best bagels are at Ess-a-Bagel. i'm a native New Yorker whose father regarded a dozen bagels in the freezer as a Jew's snow emergency kit. I"m also of the generation who when not otherwise occupied, went out on a Saturday night to pick up a copy of the Sunday New York Times at around 11 PM and fresh bagels for Sunday breakfast,

Hello Nicola and Andrew. Well, it was fun watching try bagels in New York. If you're home in San Diego and would like New York bagels delivered to you there, QVC works with Just Bagels in the Bronx. I get 24, or should I say, four bags with 6 bagels in each. Since they don't have preservatives, you have to freeze them. They are pretty good, and when you put them in a microwave to heat them because they are frozen. They come put great after 30 seconds. Get some cream cheese. Lox smoked because it adds a layer of flavor. And tomato slice and sliced red onion. You'll be transported back to New York. YUM!!!

Don’t know how true it is that it’s the water makes the bagel, but that has been said, about the pizza as well. Pretty much all the surrounding states around New York I have the same water so tend to be very similar to the pizza and bagels you get in the city.

Liquid Malt is the secret ingredient in bagels. Very few still use this ingredient because it can be a bit messy and it cuts costs. Some use the powdered version but MOST skip this ingredient all together. It is usually skipped to cut corners but what is missing is the color that it gives the bagel after baking. Bagels should have a nice caramel color and a slightly hard shell with a yeasty, doughy center. The issue of water is hotly debated....but I believe the difference between a crap bagel and a quality bagel always boils down to the ingredients. When the skill of making bagels is passed down...steps are usually skipped to save money....an example of this is that bagels used to be all hand made....now machines are used. There is definilty a difference!

Bake goods in New York are good because of the water. NYC has really good water believe it or not. That is one reason the pizza is so good also. I hope you had a dirty water hotdog. It’s not really dirty it’s the hotdog carts.

Go to Red Rooster in Harlem to get literally anything, ate there all the time when I lived on 129th. Also, highly recommend Vincent's on Mott in Little Italy as an old school Italiam gem. Their fried shrimp and calamari were a huge treat when I was a kid.

I have several locations of a bagel place called Brooklyn Bagel near were I live. It's the closest thing to a New York bagel you can get here. I always get their lox and bagel. It's my favorite. Love how you are getting more adventurous in your tasting experiences.

NYC and NJ have amazing bagels! I have a bagel shop around the corner from my house and there's nothing like a fresh bagel. My faves are breakfast bagel with bacon, egg and cheese or onion, cinnamon raisin or everything bagels. If it's still hot, then either nothing or butter. If it's completely cooled, then sometimes toasted so the butter melts in or cream cheese. I really do love just taking one and ripping it apart and eating it just like that.

@@thebritstry and they really are! When I went to college, this was the only thing I truly missed. My bagel shop is owned and run by Jewish twin brothers. My town gets overrun by new Yorkers once the weather turns warmer and I can't get into the shop because the line is out the door and around the corner. These also travel well without anything on it. My brother's family lived in Florida for a few years and we'd bring them a dozen or so when we'd visit. Oooo... Cinnamon raisin bagel and spread with a bit of peanut butter. My nieces grew up on those!

That first place y'all went to for the Lox Bagel looked really good but I was really surprised with the second place and all the different cream cheese flavors they had. Something I forgot about but got reminded of recently that y'all need to try in Midland, TX is Summer Mummers. It's a funny skit show that you can throw popcorn at. If you do get to try it out sometime, wear clothes that you don't mind getting covered in melted butter in. The wife and I have been but I end up eating the popcorn more than throwing it. It's really good popcorn.

New York water w/ its high mineral content is why bagels/pizza dough tase so good, but, truth is, there are MANY great bagel shops all around the tri-state area. My fave is a local guy where I live just outside the city and he's IRANIAN!! His bagels put most everyone else's to shame! P.S. I love an everything bagel w/ cream cheese and chive.
