You can use whatever oil you like. I use bacon grease to cook the veggies then add the broccoli. I make these weekly using a variety of veggies and/or meats but I never put any almond flour in it. Easy peasy!

This is not what I was expecting, as in Europe a casserole is more a main dish consisting of meat and vegetables in gravy, braised in the oven. So I've learned something new, and would definitely give this a try. Only thing is I don't like almonds, and am not sure if regular flour would work well in this recipe. What would it typically be eaten with? (P.S. Glad to see the grown-ups doing 'proper' cooking again! 🙂)

You could use regular flour, but you'll need to play around with the proportions of milk and flour. I would omit the tapioca starch as well. And since this is considered a side dish, I would probably pair it with some meat like a roast of some sort.
