@SketchyAsFunk because she's not done cooking it yet. She only seared the chicken breast, and then she put it on the tray to finish baking in the oven. Cooking it in the pan was just to lock(sear) in the flavor of the chicken. At the 415 mark the chicken is still raw on purpose
