I'm normally not the biggest fan of ramen noodles because I find them to be very unhealthy but I think I may have to break my rule just this once to try this recipe

Oh, Paula--thanks for sharing this 'gifted' recipe from two of your viewers; it will taste great AS IS.. I had an idea I'd like to add here in re to this crunchy cole-slaw dish. I saw a recipe for baked and crunchy Chickpeas. Open the can, rinse and allow peas to drain in colander, about 1 hour. Then, in a preheated oven, lay the peas out on a baking sheet lined with parchment paper (or whatever) and bake til dry and crunchy (but not over-dry)..Then take the crunchy chickpeas and put them in a bowl, where you'll add whatever (healthy-needs friendly) spices you like and then put the serving bowl right next to the coleslaw on your serving table, and let guests/family add them to their slaw, just as they please. The crunchy doesn't HAVE to be ramen noodles OR the seasoning packet, ya'll. Okay, then, and thanks.

I have an idea! Why not just find 'any' coleslaw recipe that suits you, and I'm sure it will do just as well. That's what I am going to do myself... The basic idea for me is to make a slaw that you like or suits you and your family, and be open to adding some 'crunch' to it for texture. A recipe is a 'basic' pattern that you just alter to suit. So--by all means, put 'crunchy slaw' on your menu! It'll be a fun change. ☺

A sugar and canola coated salad is a health hazard I gotta tell ya folks, forget the noodles fried in butter, and just add the seeds , otherwise you are speeding down the road to diabetes and heart failure with that stuff. Have it with just lime juice , or lemon , even a little oj, a d if you gotta use oil go with Organic cold pressed extra virgin Olive oil . Mam, Please , show your loyal fans a healthier way to live. You will certainly expand your audience aswell. God Bless. Change is good and admirable.

This salad is not as good when it gets cold because of the oil.....oil is not good cold....I think mayo would be better.....

Hi Nancy, I appreciate that you are reminding those with health issues that most any recipe can be adjusted to meet their 'diet' needs; it just requires a little research with a dash of determination. Right?! I'm sure you'll find a better alternative.☺

To much sodium in those seasoning packets, and ramen noodles are high in carbs. I'm sure this tastes good, but I wouldn't be able to eat it

Well, Peggy, Hi! For myself, I'm a 'make it work' kind of gal. Please note my comment above, and see if that small change will be of some help to trying this delicious Crunchy Cole Slaw. Remember, as life rolls along, needed changes in our diet needs automatically begin to make it necessary for us to do the research and find out what options are 'out there' now. Cooking can't be fun if it's filled with 'can't's'....My best to you and may your kitchen be a joyful place. :- )
