Hi friends! There are so many new faces here and I appreciate you all so much. A lot of you have arrived from my dollhouse renovation series which I promise to get back to as soon as I have some free time but for now, I'm here trying to keep this ship afloat so please let me know if there's anything regarding the bakery you'd like to see more of!

As someone who worked as a early-riser baker for 3 years until last oktober, the one thing I loved the most was seeing everything coming together for the opening of the store but it was also the thing I disliked alot because of how stressful that time of the day was because we were a fairly big bakery that also delivered to places. Now that I'm working as a baker on a much smaller scale I have the time to appreciate the work me and my colleague have put into the thing we're selling.

They sell powdered egg you can mix with water to make egg washing and consistency easier. ESP with the price of eggs these days. ❤️

We were just looking into that last week and haven’t gotten around to ordering it. Any brand you can recommend? I’m worried about the protein strands in the whites clogging the nozzle.

Is it weird that I had tears in my eyes for you watching this? To hear how far you've come from day one and the 30 pastry struggles to 200 a day?! I AM SO PROUD OF YOU I COULD CRY...and literally am lol. This is just so inspiring and I'm so relieved to hear it's getting a bit easier for you and Chase. It still sounds absolutely exhausting and extremely challenging lol but easier than those first few weeks/months...and it will only continue to get easier and easier by the day I hope. I actually thought of you the other day watching It's Complicated with Meryl Streep. If you've never seen it, try to watch it on a relaxing day off. She owns the most beautifully charming bakery and makes chocolate croissants while stoned at midnight with Steve Martin and just lives her best Nancy Meyers life - I know that will be you someday very soon

Awe that’s not weird at all, I cried writing the part about the seasons changing 🥲😂 I saw it once in theaters and remember belly laughing with my mom but haven’t watched it since! I’ll put it on the list! ❤️ Thanks for your sweet words Chelsea!

I found you through your dollhouse shorts then got so excited to see your Fresno thrifting videos. I live in Fresno and went to several on your recommendations. But I’m staying for your bakery journey and homey videos. I am gluten free so I can’t eat your delicious looking creations but I like to imagine the smells at your bakery!

Concerned you may leave us. I miss Sacramento after moving here 2 years ago but this place has its charms. Have you tried India Cafe yet? Their Tikka Masala is liquid crack.

We’re not going anywhere for a while Bread Savage certainly isn’t!💕 Yes we tried it a couple weeks ago and everything was sooooo good! The chef showed us how he makes naan in the tandoor oven, so neat!

I started a coffee house & delicatessen when I was 24, and was absolutely brutal those first few months. My folks owned a restaurant, so I thought I knew what I was doing, and in many ways I did, but in as many others I did not. 80-100 hour work weeks, one catastrophe after another (the bakery that supplies our focaccia bread flooded last night?! Our produce order froze in the delivery van ?![Alaska]…) but I eventually I did find my groove. I never did work less than 60 hours a week though lol

awesome vid. 10-13hrs days start to finish quicker as you get used to routine lifestyle. I've been a baker for half my life and looking forward to opening up my own baker with my brothers soon. Keep baking!

As of right now, I am young (and grateful for that fact). Recently, I had come up with the almost unobtainable dream of opening my own bakery. Watching this, I realize that maybe that dream isn't so unobtainable. I have been working on figuring this out, but your channel has helped a lot. Thank you :)

I have my first health inspection tomorrow and the process of opening my bakery has been so hard! To hear someone else feel the same way I felt and experience things the same way definitely made me feel better and more normal. Thank you.

It gets better hang in there! Our health inspection day was soooo hard and long but the actual inspection ended up being so fast and painless. You’ve done all the work, just trust yourself ❤️

I'm here listening, watching the beauty that is a masterful baked good, and can only think about how jealous I am, even of the back pain and exhaustion that comes with pushing through. Despite it all, I'm still a home baker, watching you persevere because your passion is too strong to hold you back.

Hi Brooke, I’m looking at the Estella dough sheeter you’re using. I read some online reviews mentioned that the roller height adjustment doesn’t have a lock, so it moves around when laminating if not held by hand. Would you mind me asking about your personal experience and would you recommend it?

I haven't noticed that issue at all, that sounds like theirs maybe loosened up after use. So far, mine stays at the setting I place it at, but I've only had it for about 6 months.

Be honest and show who really baked all the sorts of breads.... You wore the cardigan in the space that must be warm because of dough? And driving at 4.30 to work is too late.... This is no go, you not convinced me.
