I'm Black, and when I was younger, I remember we lived in an integrated neighborhood. There was an older Italian woman who lived in our neighborhood. She taught my mother how to cook tripe, we ate tripe on the regular. We loved it, very delicious!! 🤌🏽🤌🏽

OMG! I haven’t had trippe for years my grandma would make this on Fridays during Lent, she added potatoes 👌 ! There was a Trattoria called Fernando’s off the BQE in south Brooklyn don’t know if you guys ever ate there, all Italian delicacy, Ponelle, Vasted, stuffed peppers and of course Trippe! Omgoodness my all time fav dish that my mommy taught me to make them my old boss/family friend who is Italian gave even better tips and it's even more tender than my mom's thanks to her, if noone knew they'd think it was pork in sauce. My mom would have me do 2 bills 1 without cut, 2 after cut it was a all day event just for me her and my grandpa. Then my old boss taught me to cut for both boils and smaller pieces with a set of kitchen shears.... Fork tender. Now nearly 27+yrs later my daughter loves just as much as me I had to give her recipe but she still asks for mamas. God bless and tripa to all yummy manjia all 😊.

My first experience eating tripe when I was 17 working as a plumber’s helper. We were working on one of the old piers in Brooklyn. These Italian guys ran a little food place out of a shanty on the pier. On the menu one time they had tripe heros. I thought tripe was fish. Anyway I loved it and shocked when they told me what tripe was. I love tripe in any form. I live in AZ now and menudo is abundant here. I’ve got frozen tripe already cut up in my freezer. Can’t wait to try your recipe. You guys make me miss home whenever I watch your videos G-d bless

Used to have tripe at my Sicilian neighbors' house on Saturday nights. First they gave you a bowl of homemade cavatelli with some of the sauce in which the tripe cooked (with a little grated cheese and crushed red peppers). Then they served the tripe which had potatoes and peas cooked in the sauce with it and a salad with good Italian bread. They taught me to sprinkle more cheese and hot peppers on the tripe. Homemade red wine on the table. One of my favorite meals.

Mommas wrong it's called honeycomb tripe because of the honeycomb pattern on the inside of the stomach not the name of the dish . Honeycomb tripe is the best the other cuts of trip aren't that good

My father loved this and as a kid I started by dunking bread in the sauce and eventually ate everything. If your a foodie like me, this is heaven. I went to Italy for a month and would eat this of all the street trucks that served it. This on a roll or a Lampredotto style sandwich is fantastic... Looks great Boys! When I was in my early 20's, I lived in Italy for a couple of years. I was lucky enough to be invited to an Italian home for dinner. They served us tripe in a red sauce. It looked very similar to this dish, except the husband (who was a chef in a local trattoria) had cut the tripe into thin ribbons. It looked very similar to fettuccini. It was a wonderful meal. I've wanted to make this dish for my own family. I think I'll give it a try.

I make this from morio batali's recipe and it is really close to yours. And you are right it does have a certain smell to it when cooking cause of all the grass they eat. Try a little vanilla in the water When boiling it that does help the smell. Also add a little sugar. To the tomato sauce and a stick of butter which will cut the down the acidity and mellow it out perfectly. Everything else in your recipe is spot on. Also the price of tripe has gone through the roof over the years because more and more people are finding out about it. Thanks for sharing.

I have never had tripe that way. It looks good. The only way I've had tripe was stuffed and baked my Aunt would brush the outside of the tripe with a seasoned oil and salt n pepper. I wish I had the recipe but it died with her.

So, I grew up in Italy and we ate tripe regularly. Your recipe is similar to what I know , but, I would put the basil in at the end and I would simmer the tripe in the sauce longer, maybe an hour, and you definitely have to also add fresh mint! If you did that maybe your brother might be persuaded to try it!

It looks beautiful. I need your help/advise. I was making la trippa, but I cannot get rid of kind of “special smell’ at the back of my palate. The sauce is great, but trippa itself has this aroma I cannot stand. Is it something missed in cleaning? I noticed some nonnas in Firenze and Palermo areas soak it first with lemons or oranges… What do you suggest?

Tell your brother that the hot Dogs he loves 99% of the time have Tripe in them. they are made from all the unused parts of the cow, pig, etc. My friend used to work in NYC, at one of the places that made "name brand" Hot Dogs, they also use Pig Snout, & Cow Utters. so he has eaten Tripe.

@@BrooklynBrothersCooking the sauce I grew up on and learned to make has sage, cinnamon, and cloves. No beef or pork meat but does use beef broth. Most of what you do and use aligns with mine (at least the closest I’ve seen). I’m still searching for someone who does theirs similar to mine to compare backgrounds, regions, etc. I can’t be the only one who makes it the way I do. There are a few bar/restaurants around here in NEPA that serve trippa. While it is acceptable, it’s not as good as my family’s recipe. I’m really surprised no one has come out with jarred trippa (like spaghetti sauce). At least I haven’t found. Trippa ala romana is my favorite food. When I make it, it’s usually 50 pounds at a time.

Question I never saw you scrape off the back of the honeycomb? I’m making this tonight and I was told to scrape the membrane off after rubbing it with salt. Is this not necessary? I also soaked mine in vinegar apparently it has a smell. Idk. I feel like I took off a lot of unnecessary good stuff doing this damn scraping. I need to get more air this was wrong and try again.
