Check how you kneed the dough and also while rolling out the dough avoid rolling the dough too thin

Cover them - don't leave them open. My mum uses the unga paper to 'line' the bottom of the dish she puts them in. And also check the temperature of the pan that may lead to drying out with chapos, and oil in the case of mandazis. Medium heat works well.

there are alot of reasons; but most common the pan was too hot; regulate the temperature from time to time 👌🏿
