What surprises me is that the patients have huge amounts of tartar but hardly any toothdecay. Is this because of a low sugar diet?

This is due to differences in oral flora. Tooth decay and gum disease are caused by different bacteria. Whichever pathogen is more dominant makes patients more prone to that disease.

Watching this is very humbling to me. To be middle class (anywhere in the world) and afford to go to a dentist 1-2x/year, changing my brush whenever I want, choosing which flavor/brand of toothpaste to buy. This is very unfair, some people don't get to ever feel that.

You ought to make sure that you have refreshing White teeth (which also corresponds to 3 light pixels), however tartar build-up will Yellow your teeth (and so the Blue pixel darkens), should the Green pixel also darken, then your gums will bleed.

It does! I had removed a small portion of tartar with a needle and saw my gum in a horrible condition and freaked out but it grew back.

Unfortunately no. Gum disease like this makes teeth more susceptible to becoming loose and falling out, as you can see once the tartar is removed the gums have receded from the bacteria

The gum tissue heals up on its own and covers the gaps in a few weeks to a few months time. Meanwhile the person undergoing scaling has to make sure there are no foreign objects stuck in those gaps after the scaling is done. The dentist usually prescribes an ointment as well to make the healing process quicker.
