Looks great, Tami! I love pomegranate molasses - lovely in Middle Eastern dishes too, and I always have frozen pomegranate seeds. Would you serve this dish with anything else - e.g. rice? Potato? Sweet potato? Here in the UK we can’t get the California flavoured balsamic vinegars but I always have ordinary balsamic vinegar in the pantry and would probably mix that half and half with the molasses. As well as Dijon, I also have whole grain French mustard which is in a jar, and not as runny as yours - I think that would probably be OK with this.
