In this video you will learn EVERYTHING about BOBA aka Tapioca Pearls and how to Cook a Large Batch of it for an award winning Bubble Tea Shop or Cafe with my recipe.
This is a long awaited & anticipated video! I hope I've been able to cover everything about storing, cooking and flavoring these amazing Boba Pearls for you! If you have any more questions, drop a comment below and I'll do my best to help you out!
Directions:
❤️ 700 Grams Restaurant Quality 'Grade A' Tapioca Pearls (USA 1.5 pounds)
❤️ 6 Liters Boiling Water (USA 1.5 gallons)
❤️ Cook for 30-minutes - stirring halfway through
❤️ Turn off the heat completely and allow everything to rest for an additional 15-minutes
❤️ Rinse it for 1-2 minutes in a sieve with cold water until the water runs clear.
❤️ Add my special "boba solution": stir together 4 ounces of Longan Honey Syrup + 1 Cup of Brown Sugar + 500ml Hot Water. (USA 17 ounces of hot water)
❤️ Use this solution ratio for every batch of 700 Grams of Cooked/Cleaned Boba.
❤️ Let the Pearls soak up the solution about 15-minutes before adding them to you drink.
❤️ Enjoy!

@@mybuddyroland4968 My shops were in the UK so I enjoyed using the brand 'Boba Box UK', but there are so many different suppliers out there and each one is slightly different. Never hurts to try as many bobas as possible before you commit. 🤣

My home made boba pearls always end up getting hard after my first use shortly after cooking. Now I know why. I've been using the 5 minute quick boba balls, no wonder they get so chewy!! 😩😩😩😩 You're a life saver. Definitely will try out the longer cooking one.

Thank you for sharing your insight, I actually cooked my bobas the way you explained (15 min, stir, 15 min, rest 15 min) it was on the stove but I have never had such perfect texture. I was sure my bobas were bad quality, turns out my cooking was at fault 😅 thank you again !

I love your teaching. my ONLY concern is contamination from the sink when you first pour into the strainer. The level in the sink looks to meet the boba in the strainer, and that is a disaster if there is ANY contaminants in the sink (and most home sinks are filthy even after being cleaned). I suggest placing the strainer on an upside-down dish to raise it above the bottom of the sink. This goes for anything you are straining. Fruits, pasta, boba....careful of cross-contamination! :-)

There's always that one person who has make issues out of nothing, idk if ur blind or something, but if u look properly there is a 1in stand on the strainer, so it won't touch. You didn't even double check before commenting.

​@Nihal Gaming I did watch it, and I went and rewatched it just now, and if you look, the level of the liquid in the sink is so high it reaches past the curve of the bottom of the colander/strainer, which increases chance of cross-contamination. I posted something positive with a safety concern. I didn't judge or disparage the channel or the author. You should try that sometime.

I’ve been struggling with cooking boba at home and it turning out too hard. This video was the most descriptive I’ve found in two weeks, thank you for what you’re doing for the boba community if I can call it that haha I use a pot of water on the stovetop and worry that the differences in method will effect the outcome of trying your instructions at home, what would you say is the, or some of the biggest causes of boba that just doesn’t have the softness that we all know and love ?

It might be your boba brand? The first brand I bought was cheap and never got soft enough. Then I found out, if your uncooked boba doesn't crumble when you squish it between your fingers, it isn't a good brand.

Kristin, can you do a video of how to set up for an event? How do you store ice at a day market (would buying bag ice and storing in a plastic cooler okay and just scooping it out to serve), how to set up with just one table at a day market etc

I've made a note for part of a future video idea. But yes, you can easily store ice in coolers. This is done all the time by street vendors in places like Thailand. You'll just use a different type of ice than square... More like pellets is easier for this, and just pour the drink over the ice in the cup. No need for a sealing machine in this case, just a simple lid with a hole and straw, or even a sipper lid if no toppings. Hope that makes sense. 👍🏻

Please do that video, tell us how many hours you'd recommend getting there to set up, and would you make large batches of milk tea on-site if its a far destination and serve them out of beverage dispensers...stuff like that geared towards someone who doesn't have a physical store

Nice vid. Cooked starches change their structure after refrigeration. They are never the same again (tougher). They are even absorbed into your blood steam slower and have a lower glycemic index. A consideration for diabetics and those observing a ketogenic diet.

Hi! You show storing the cooked boba in a rice cooker during the day and warming for 5-10 mins every 1.5-2 hours. I'm going to offer tapioca pearls as a topping in my frozen yogurt shop. Should I only put as much out in the toppings bar that will be used within 2 hours? And then refill from the rice cooker? Thanks!

Hi Jennifer. I think I understand your concept. Basically you have a froyo shop, and there is a toppings bar that customers can help themselves to after they got their soft serve? I just want to make sure you're not putting the cooked boba into a refrigerated section of it... (some use fruits and are kept cold from underneath). If it's room temp type toppings, then yes, just put it in a smaller size gastro-norm pan, enough for a handful of people to help themselves at a time... and top it up throughout the day. Because as it sits there, it will become cold and hard. Sounds like a fun idea! If it becomes so popular you can't keep it topped up, then I would option for a small 'soup' holder. it's a very low temp warmer to keep soup in. They come in all shapes and sizes. Just put a picture of the cooked boba on the outside so people know what's inside. Also, opt for a heavier brown sugar solution. Thicker ratio of the brown sugar to water... this is currently most popular for these kids today. 😂😂😂 You can find images on social for what I'm talking about - right up you alley 👍🏼.

Thank you so much for helpful information. Can you tell me what is the size of your hot water boiler? What would you recommend for a big 10,000 outdoor event as a tent vendor? How do you make sure you have enough bubbles and teas throughout the day? I am planning to get one of each 12 litter black and jasmine tea urns. A 30 cup (dry ride) commercial rice cooker? Any idea, suggestions I would appreciate very much. You are an excellent teacher. 👍❤️💐

The size of my hot water boiler was around 30 L. It was a manual fill. Honestly doing a large event is just trial and error. I usually recommend people to start smaller at maybe a farmers market or small kiosk, and then work their way up to big events. Because the biggest issue that you will have at big events will be running out of ice, having waste you're unable to dispose of potentially, and an electricity supply. If you are able to get fresh water during the event, then that will be a bonus. But ice will probably be the biggest difficulty especially if you are in the middle of a field and it will take an hour or more round trip to go get more. But nobody wants to spend all of their profits on ice which is wasted at the end of the day. There are so many factors for an event such as who the customers there, what is the target market in terms of culture and taste preferences, pricing, etc. And in terms of the recipes, there are big batch recipes or made to order recipes, but trying to keep things as simple as possible with as little waste at the end of the day is key. And for calculating the recipes, it's all multiplication. However even then the flavor may not turn out exactly right so you'll need to trial an error large batches in advance. It will be a lot of work and a huge learning curve for you, but hopefully in the end you will be able to make a profit and have learned a lot so then that way the next time you do a large event you will already have notes from the previous one on how to improve. That's all business is just making sure that you improve from every event every single time to get better and better until you have it perfected and can continue to divide and conquer. 😍😍😍 Good luck!!!

Hello Cyril, Yes I did events and popups. Everything is the same, but at least one day (or more) of prep for everything 😅 Just do everything at a larger scale, keep it refrigerated, etc... Boba is tricky. Ideally needs to be made on site, numerous boba cookers, one staff just dedicated to making boba at large events. 😅 Small events it can be made in advance and kept warm. I sold all my shops and businesses now so I don't foresee myself making a video about it all any time soon, but perhaps I can tag along with one of my clients in the future and release that as a video.😉😇 Good luck!!!

If you're in a hot climate, you can keep it in anything you want. I found it easiest to use the same thing year round, as this way I didn't have to rely on the staff to make the decision which container to use depending on the temperature. Instead they were trained to understand the temperature of the boba itself and QQ of the pearls instead, and if needed in the winter and colder months (6 months out of the year for us), to turn it on "warm" for a little bit to make sure it was at optimum texture. Hopefully this makes sense. 👍🏼

So glad you made this awesome video. Thank you VERY much. Regarding your rice cooker to cook boba. Usually a rice cooker automatically switch to warm as soon as it is completed. So I assume you click “cook” for that first 30 mins for water to boil and after it boils, you click “cook” AGAIN to keep it cooking for 30 mins? Am i correct? Lastly, I store my boba in an air tight container, but for some reason moisture is form on the side of the walls, Then I try sealing it in a bag then put it in a airtight container, STILL moister now builds up on the seal bag. What am I doing wrong?

Hiya - You're very welcome :) Glad you appreciate the video! 😍 1.) Rice Cooker - so with this HUGE industrial grade one, it doesn't automatically switch to warm. But I do know what you mean, as my small home rice cooker does do that. The large one for the shops that you see in the video, it will stay on cook, even after the water is boiling. It will only switch to warm if we switch it manually. Not sure why exactly, but it was this way for all the different brands we used/tried out over the years. 2.) I think I understand what you're talking about regarding the uncooked Boba. Basically when you open the bag and you transfer it into a different container, you are getting a lot of humidity? Can I ask how long you are leaving it in these other containers and what size containers you are using? If it is a large container you are pouring the uncooked boba into, there will be a greater risk for a lot of condensation. But if you put it all into many smaller containers it is less likely. to have this condensation problem. The other thing I would do is: inside each giant bag of Boba there is a 'dehumidifier little baggie tablet' type thing. You can save those overtime and then put them into the divided containers and that will prevent any moisture buildup. But just make sure you and your staff remember to remove those dehumidifier tablets before you cook the Boba!

You can if you want. But decide if you want the thickness of it for the look, or to water it down a bit so the tapioca absorbs it better and it doesn't cost the cup... Your decision 😁

Mam I'm starting my boba business from home. If I go for delivery and add fresh tapioca pearls in my bottle then fill it with the cold drink. Would the pearls become hard due to the drinks cool temperature whilst im out for delivery.? Delivery would take an hour or so since there is traffic and I delivery it on cycle most of the times. Hi - Good question. Best way to find out is to make a drink as you'd normally do, add the cooked tapioca pearls, and leave it on the counter for an hour... then try it out. This will give you an idea of how the customer will get the drink. If you can go a step further, actually put the drink(s) into your carry case and bike around an average length... then try the drink and see how it looks & tastes. The reason I say this is because each brand of Boba is different. Some last okay in a cold drink, but others go very hard. Good luck and thank you for the blessing.

Hi Daniel, I'm excited for you to start your own shop! I hope it will be a fun experience 😁 The 'industry 4-hours' thing is not only because of potential bacteria growth, but also the boba will either go hard, or become all gooey and gross. If someone doesn't know, they won't taste the difference... but for the connoisseur and major fans... if you keep the boba too long, you'll hear about it from them via complaints. Here's a funny story: After I sold my shop, the owner had new staff, etc. I went in once to get a drink and i noticed the boba didn't seem flavored at all with the solution. I politely mentioned to the new owner later about this and they inquired into who was on that day. Come to find out that staff member was putting new cooked boba in with the old cooked boba... and not even changing the solution or adding new! 😩 First off that's not hygienic in this type of scenario, as it was the end of the day so who knows how long the old boba was there for, but second, obviously you're getting delicious new pearls... with old!? And lastly, because there's no new solution, the new boba had no flavor to absorb and tasted plain.😂😂😂 Hope that helps!

You could do as you're asking. 👍🏻 But it's a good idea If you're only making one batch at home or for a party. If you have a shop and you plan on making more than one batch, what will you transfer the tapioca pearls to while you are cooking another batch that takes an hour and a half? If it's summer and the weather is warm, you can transfer it to whatever you want. But if it's colder, you'll need to keep it warmly insulated... So up to you really 😁

Hey Kristin! I am working on opening a milk tea place here in the US and I have found your channel extremely useful! You go into so much depth and detail! No one else is on this level of clarity- thank you! I would like to ask you how many bags of boba you use per day? How many drinks are made per day from the quantity? And what boba supplier do you use? I am considering making the boba myself, however I want to reduce the costs at first so that I can focus on the menu and side menu. Hi Andrea, Thank you for your comment. It's very kind of you! 😁 The questions you asked are quite in depth, but I can answer them for the most part. As I think I mentioned in the video, we usually made 700 grams in the morning on a weekday, but the weekends we usually kept it going all day. (Cleaning it out in between, etc.) 700 grams made 15-20 drinks. My shops were in the UK so I used the supplier 'Boba Box'. But they're UK & Europe only. Everything comes down to you customers. In the UK majority of customers prefer the juice balls and jellies over boba. But in the US, generally they want the tapioca pearls (boba). So You'll just have to learn over time. Making tapioca pearls yourself would be too expensive for the demand and supply... you'd need to get a huge machine to do it which is really expensive. But there are franchises where making their own boba is a niche thing. If you make them by hand, you'll need to employ a staff member just to stand there doing this basic task all day long... staff are expensive. 😂 Better just to buy them pre-made and cook them up. Sort of yes for home consumption . They're not great tasting, but it works. Keep submerged. Maybe 4 per ice cube. Then dethaw in the microwave in 5-second increments. Let us know any feedback if you have success!

Using hot tap water isn't usually considered to be a good thing because of the possibility of unwanted things being leached into that water. Alternative: pre-heat some water in an electric water kettle.

Hello 👋🏼 Yes - quality does matter. My shops were in the UK and I preferred to use Boba Box UK. They also have an EU branch. I recommend requesting any company's quality reports for the factories to buy from... and the factories themselves should only be in Taiwan or your home country, wherever you're located... Eventually it's good to visit the factories you're buying from too as they should allow for private pre-booked tours. Hope that helps!

You're welcome Anya, glad it was useful 😇. If you don't have a small rice cooker to keep it insulated, and with the option to be able to warm it slightly during the day, it is no problem. Especially if you live in a warm climate, you can simply serve it out of whatever container you want and it will be fine. I grew up in Southern California and Boba was always just stored out because the temperature was so hot and everyone hard. However in the UK it is cold throughout the year in comparison. The place where I currently live doesn't get above 20° c in the summer. 😂 Also perhaps in the winter your location might become cold also. The idea is just to make sure that the boba doesn't go hard. But if you don't have this issue then I wouldn't worry about it. 👏🏼🧋☺️

Hey Ty 👋🏼 The thick brown sugar syrup you're speaking about for 'Tiger Milk" is from Taiwan. They sell it in a variety of flavors, styles, thicknesses, etc. It's common in the industry to buy it, opposed to making it from scratch; cheaper, easier, and much less clean up. But if you choose to make it yourself, hats off to you! 😎😍😂

Woah. That's strange. 🧐 Just to confirm: you stored un-cooked tapioca pearls in the freezer. Then you followed this video recipe from the very beginning? The only difference is that the pearls came out directly from the freezer... you didn't just open a bag fresh. Right? So the water was at a rolling boil before you added the frozen pearls and you cooked them for the full 30-mins plus 15-resting?

I cooked tapioca straight from the freezer into boiling water and it melted and no balls remained but then I tried again and waited for the tapioca to reach room temperature then put it in boiling water for 25 minutes and followed your method after that and it became good

Hello 👋🏼 thanks 😇 They're actually Bar Mats. They come in different size, shapes and colors. I found the black color to be the best option over the years 👍🏼 Easiest to clean and doesn't stain from the tea.

Hi Yana 😇 You're welcome 😁 So if you just do a Google search for Boba Supplier or Bubble Tea, etc... You wanna find a US based company. One near you. Ask for samples from different companies before you commit to a large shipment. There's so many options in the US for good US based suppliers, it might take time to find one you like best! Good luck. Hey Lexie, That's great! What county are you located? In the UK I used Boba Box.. But I know the most popular brand around the world for tapioca pearls is Chainly. In the USA though, there's other big 'middle man' brands available easily like Lollicup and Teazone, etc. So depending on where you're located, best to simply search for a wholesale or import Bubble Tea Supplier, and then see what they offer. I've heard of it before... but never tried it myself. Maybe in the future it's something I can play around with. The biggest hurdle I heard was the amount. iIf you're doing it at home, it's fine. But for a cafe you'd need a HUGE pressure cooker.

I used an import/distribution brand in the UK called 'Boba Box UK'. They ship also to European countries. They offer different brands of the uncooked boba pearls, also the white iridescent type and the mini type... Hope that helps 🙂

@@xViaan I went to Taiwan back in 2017, to see about sourcing direct. At that time they didn't have any way to offer this service at a good price. Either we had to buy shipping containers worth at a time with boat rate transportation in order to get a better price, or we would get the same price as the UK supplier, but have to pay an crazy amount on air freight shipping. 😭😭😭 Not sure if things are different now, and if you find out it is, please do let us know 😇

Hello Ivan 👋🏼 Thank you for being a loyal subscriber 😇 I would recommend trialing Bamboo vs Paper vs Plastic and different brands and styles, but make sure they're 12mm width x 21cm length min. Alternatively the boba may be sticking together during cooking. This can be because of the brand of boba (each is different and cooks strangely differently!) So if that's the case, make sure the water is at a rolling boil and slowly add in the pearls while stirring slowly until they all float. Put the lid back on, etc Lemme know if any of my thoughts, info, and ideas help! P.s. your boba also might be too big for your straws. You might have XL size boba but only normal boba size straws 😅
