I wouldn't add the soba noodles unless you are eating all at one meal. Best to serve by portion in a bowl and ladle soup over noodles. Just mho.

Amber Brown - it's a japanese paste made of fermented soy beans and yeast, it is really tasty in soups.

Grace Weckesser Miso is very flavorful, with a protein and umami taste. The soup would taste completely different without it.

For Japanese people, "miso" is a necessary taste, but I think that "ginger and garlic" is unnecessary(^^;;

Cheese is made from "milk" by fermentation of "cheese bacteria" Miso is a seasoning made from fermentation of "soybean" to "miso bacterium" (^ ^)

So yummy and so filling. Love soba noodles. I hope you used the pure soba and not the stuff you get at Japanese reataurants, Thats about 15%soba with the rest just white flour. NOT the same and dont have the nutritional value. 100% soba is the only way to go. Cost more but theyre the real thing.
