Refika! I loved that you mentioned getting rid of pests by putting the product out in the sun. I grew up around livestock in the Phoenix, AZ, USA area. I worked my teenage years on a Quarter Horse breeding farm where we had sometimes 150 horses, sometimes 300 horses. Naturally we had to buy and store a large amount of grain to supplement the hay feed, and we kept the grain in large aluminum bins with covers. This helped because any time we discovered weevils or ants in our various grain bins we would haul them out with the lid tipped, into the sun for a day and the bugs would make a beeline out of the bin and across the desert! We are very hot and dry in Phoenix. Last year we had more than 70 days over 110 degrees Fahrenheit! I knew then that what I was learning about storing grain for the horses was very old knowledge and I'm grateful to you for teaching me more very old and useful knowledge. You mean so much to so many of us! God bless!

Good point of salt grinder having a ceramic blade. Also the bay leaf to repel little creatures and rice pouches to absorb moisture. An ounce of prevention is worth a pound of cure, for sure 😊

I always store seeds and nuts in the freezer, it is dry and the cold keeps them from going rancid as fast. I'm very sensitive to nuts going bad so I'm extra careful. Coffee beans/grounds are also suprisingly fatty and keeps longer in the freezer. Interesting series 😊

It's very humid where I live. I keep garlic and onion powder in the freezer. Also sugar. But I also learned to mix spices in a prep bowl since shaking them over the pan is exposing them directly to steam.

For putting in the grains does it have to be a fresh bay leaf or can it be a dried one? Also what did you say the main blade in a salt grinder should be?? I couldn’t understand what you said… Great video thanks!

A dried bay leaf works just as well! 🍃 It naturally repels pests. For the salt grinder, the blade should be ceramic or stainless steel-regular metal can corrode over time. 😊

This was for many very useful Information, what we are losing in all this "modern" World - What I would like to see also is "How you use tried, local Mushrooms in various cookings" - Dried Mushrooms hardly ever anywhere make they real own Topic in cooking at all... Could be interesting to know your Ideas to choose, store nnad use them... Here in Finland we have an Abundace of wild Mushrooms to use... I try and dry them to be used later, but what about in Turkye?

A lot of times, storing jars upside down when they have liquid is good because it it is well sealed the probability of air going inside is low, if air goes in, the liquid will come out so you know it is not well sealed. So letting the jars upside down for a day after sealing the preserves can be helpful to be sure it is well sealed. I wish my mom could understand English to be able to understand what you say about letting things well sealed and out of sun and heat because she has everything right next to the stove all the time. If we take it away she will complain and put that back there where she can just grab and use 😒 We gave up trying to store things safely and buy expensive stuff because it gets spoiled too quickly. We just buy enough for one or two uses and still sometimes it will be ruined in between.

Thank you for these reminders I have recently discovered sumac pickled red onions. I've been cutting the onions thinly, usually a large red onion, then adding the sumac first, followed by the juice of one whole lemon. I generally leave the jar out to ferment for about 3 days. During that time, I burp the jar on average, once a day. When I'm ready to eat them, I add salt, shake to distribute and ND place them into the fridge. I'm writing to you in the hope that I am doing it properly and not poisoning myself. Someone told me that pickling incorrectly was a mistake that could make me sick or worse. Please advise.

I freeze excess flour to kill any larvae that might be in it that can't be seen. Could you mention which sauces need to be refrigerated and which can be stored at room temperature? I know soy sauce, Worcestershire and hot sauce and honey can be kept at room temperature after being open. What others can be? Acid needs to be added to minced garlic kept in the refrigerator to prevent botulism.

Can we talk about sumac for a second? I've bought bright fresh looking sumac and its nice. But I bought dark less fresh looking sumac (ordered from a reputable company online) and it tasted just as nice. Are there different sumac types? I would have thought the dark would be less pungent. How can I gauge it?

It's just a different color from how it's processed. No quality difference. Lebanese sumac may be a lighter color than Egyptian sumac. Also, no quality difference.

Yes, there are different types of sumac, but the color can vary depending on where it grows. Even the same variety can have a different hue when cultivated in different regions. Additionally, after harvesting, oxidation causes the color to shift from burgundy to brown or even black. If you're using ground sumac, be sure to store it in a cool, dark place, as its aroma can fade quickly when exposed to light and heat.

I have a Question. I store my flour, sugar, legumes and so on in a plastic storage containers. I recently heard that storing your dry food in plastic containers is not good for health. Is that true? Or a myth?

Good question! 😊 *Plastic containers are generally safe* if they are *food-grade and BPA-free. However, for long-term storage, **glass or metal containers* are better as they prevent moisture buildup and potential chemical leaching. If using plastic, make sure it's airtight and stored in a cool, dark place!
