Bread Pudding Recipe 500g white bread, torn into pieces £1 (with or without crusts) 150g light brown sugar 29p (white sugar is fine if no brown sugar) 400g mixed dried fruit £1.27 2 tbsp (or more) mixed spice 18p 2 large eggs, beaten 46p 600ml whole milk 88p (no need to reduce milk if using butter, feel the pudding could easily take the extra fluid) 100g melted butter (optional) (I used 50g) 43p demerara sugar to sprinkle on top 6p Total cost: £4.57 or £1.52 per pud Line tins with parchment paper. Tear up the bread into a large mixing bowl and add the milk. Squish down and let the milk soak for a few minutes (longer if using crusts) While bread/milk soaks, melt the butter and beat the eggs. The bread/milk mixture may need stirring/bashing about to help break down the bread, a stodgy mixture is what you are looking for. Add all the other ingredients and mix until thoroughly combined. Pour into your prepared tins, and pop into AF on BAKE setting 160c/320f (oven: 170c fan/190c/gas mark 5) Bake for about 30 to 45 mins depending on size of basket/AF etc. Once cooked (clear cocktail stick or 98c temp) Leave to cool (you may need to flip and cook bottom if using an AF with top only element) before enjoying with cream/custard or ice cream. Can be frozen (defrost before reheating) and can be kept in the fridge for 5 - 6 days.

My Dad's recipe was always to butter the bread, instead of adding butter separately, keep the bread in slices layering the rest of ingredients

You need to use suet to get the real stodge, some bread puddings you get are a bit cake like. And as you say nice and thick and weighty.

Hiya Kerry, This method of using bread as a fillings is quite a few years old when you made ingredients go along away, you could pop a bit of baileys cream in. I use really dark brown sugar, 1 cap of baileys, or orange juice, warm milk with cream 250ml x2, and caster sugar place all in a bowl soak quite flat and square, brush with golden syrup and a few nuts after baking for a finger biting treat, you could make some savory with smokey bacon, mushroom and onions running through.

My Dad bless him use to make it in a big baking tray. He used to soak his bread in water and wring it out in a clean tea cloth then put all his spices and fruit in it use to taste like the bread pudding you bought in the bakers dark and full of fruit. Sugar on the top lovely.

I still use my mum's recipe of soaking in water and using veg suet (she used beef), no egg or milk. I put light brown sugar in the mix with the mixed fruit and mixed spices.

At last bread pudding few things Kerry mum and nan always use the crusts ( makes your hair curly 😄!) they also soaked the bread overnight didn't always use milk , mum didn't like currents so only used sultana's also soaked overnight plus as nan and mum had dentures they both steamed the same mixture in a huge pudding basin especially at Christmas and dad wuold put some brandy or rum on his slice and light it then he'd shout fire fire and extiguish it with the custard which he always made me being a pompous little devil always had the pudding and custard separately mum used dark brown sugar mostly so ours came out darker ..... All in all i reckon i could manage a rather large slice !😅😅🎉 Happy New year Kerry ...

@budgetcookinguk when my brother's kids were young in the eighties they always wanted burgers every meal ( his marriage had failed and consequently they spent every weekend at our house so mum being a wise soul bought low fat turkey mince and we made burgers chopped onion , seasoned with pepper no salt eggs to bind them each patty placed on a strip of greaseproof paper concertinard till there was a pile frozen in a ice cream container ready to be shallow fried usually with an egg in a brown bap for Saturday breakfast when my nephew decided he wouldn't eat burgers I rolled them into sausages and he scoffed them with glee lol they're all in their 40's now with kids of their own I've got a bakers dozen of great nieces and nephews and they're all doing great 👍👍 maybe you could try making some I still make them but I put chilli paprika and cayenne pepper in mine plus wholemeal breadcrumbs blimey it's 5 a.m. better go to sleep ( I'm retired but not tired 🤣🤣🤣) happy new year

To be honest my bread pudding, is almost the same as your recipe, I prefer sultanas, and is like the ninja one with the moist (I won’t say soggy bottom) and I like it that way. Moist on the bottom crunchy on the top…..perfect. I didn’t know about the temperature though that’s very helpful. Thank you. Bye 💁🏼♀️

I use sultanas instead of mixed fruit as I'm not keen on hard bits of peel you sometimes get. Glace cherries if I've got any and vegtable suet. You can use any old bread and hot cross buns or tea cakes. Tastes way better than it should and you will put weight on if you're not careful.

One traditional London family recipe I know used black treacle and water if milk wasn't possible. It is possible to make soft dark brown sugar from white sugar and black treacle using a stand mixer.

My mums recipe uses suet, the only thing I’ve changed was less sugar lol, sometimes she added an apple, not sure if it was a cooking apple or not. Never thought of using brown sugar.. definitely try that.

That looks amazing Kerry,I've never tried making it that way just the layered slices of bread which I love,we have a dairy farm just outside Ayr and it has a restaurant called The Coo Shed,it also has milk vending machines which are filled with the fresh milk from the dairy,you pay a small fee for the glass bottle but then you just go back and fill it up,I can't remember how much it is as I just by mine at my work,great video once again flower,Happy New Year to you and the family 🍾🥂❤Xx

I bought your allotment mug and it arrived in time for Christmas,, it's a gift for my brother-in-law who also has an allotment, he loved it, so did I and I was tempted to keep it :)

Actually Bread and Butter pudding is different to Bread Pudding. Bread Pudding is much heavier and was my lovely dad’s favourite. As you can see from recipe it’s much denser as it becomes more of dough I suppose. Bread and butter pudding is slices of buttered bread with a custard soaked through and the dried fruit mixed in, no ‘squishing’ involved! Both delicious though! My daughter said bread and butter pudding was her husbands favourite so I made one, only to be told no, that’s not it… I quickly realised she meant Bread Pudding. I will definitely be trying this recipe though in my new air fryer.

Happy New Year Kerry, do you use a silicone mat under your air fryer to prevent the worktop from getting hot. I have just got an air fryer and it seems that it is recommended, also not to use it under the overhead kitchen units. Sorry for the silly questions but just starting out using one. Take care. x

Your pudding looked nice , it’s a fav of John , but the ones we buy for him are a lot darker , more the colour of Xmas cake . Never tried it myself . Johns mum always used to make it for him as well. And that was always dark as well . When we are in Devon he always gets some from a little cake shop , where we are and that’s the same , so not sure how it tastes , if any different or they add something else . I know all that I know make it soak it overnight in something tea I think . But not sure on that one . But yours looks nice as it was as well . Xx happy new year .x

That looks delicious but totally different from Mum's bread and butter pudding. She floated slices ofbutteredbread on a egg, milk, sugar, spice mixture. So there was custard at the bottom. Definitely needed a spoon to eat it and tinned apricots. 🦘

Two completely different recipes, As you said, one's bread pudding, your Mum's is bread and butter pudding. Both delicious though!
