Tha is man. Yes my bottom vents were completely closed BUT the smoke hole was open partly. If you don’t have a smoke hole then you will need to crack your bottom vent a crack.

I did a similar recipe, but used Franks Red Hot Seasoning (used to be able to get it at Costco), and basted in Frank’s Buffalo sauce! And I agree, I love any dark meat on chicken, I almost never eat breasts anymore.

Now you got to do a side by comparison cook.. vs JJ...no temps no probs (cover sns temp) ..straight old school style cook.. ribs...chicken... No burgers or hotdogs..too easy haha Makes sense Good vids!

The skin done this way is fully bite through which is the other option when not going for crispy. If it’s still rubbery then it needs to cook a little longer.
