That was really good. Most of people so focused on Flutter but since they want to make mobile apps, %99 they will have to need a backend. Just learning how to send http request to server is not enough, also you have to learn at least superficially how it works at the behind the scenes.

you should use what you're comfortable with, i personally prefer Riverpod, Because of it's easy to implement caching and invalidating functionalities.

I've contacted Udemy about this - Yes, the course is unpublished but people who have already bought the course will (and should) be able to access it. Can you try logging in from a different browser and a different device and let me know if you're able to access it? Will help to tell Udemy what worked and what didn't.
