If I wanted to play with the original resolution, are there modern monitors or TVs that support it? I can't use CRTs because I'm sensitive to their buzzing.

I play mine on a new TV and have it looks perfectly fine, no problem with resolution

Hi! In the video I'm using a cheap aftermarket Component cable which gives a much better quality image on modern TV's when compared to the original Composite cables. Additionally, if you have a North American PS2, a lot of games are compatible with 480p resolution which looks MUCH better on modern displays. So turn 480p(progressive scan) on in the game's menu if that's the case for you.
