Well, same reason why most mario's sound tracks are so good. They all have simple looping motifs with enough variation and symmetry so you can expect what is coming next without it getting stale. Sounds easy to compose but its far from simple ;P

If Mario odyssey 2 come out I would love to have all the same kingdoms with a few new ones but you explore different regions of the old kingdoms. Imagine you went to luncheon kingdom but instead of going to mount volbono you went to the alps and everything was ice cream and candy.
