I've watched a lot of foreigners trying Bulgarian food but I've never seen one trying princess with mince meat and kashkaval( yellow cheese, to Brits The closest is mild cheddar)with mixed salt. It brings sweet memories ...

The spinach soup is red, because it has tomatoes in it and it is creamy because a mixture of eggs and yoghurt is added it the end

We, however, should not bow down before tyranny and must fight such war crimes whenever we are forced to taste them. Also red pepper and chilly in moderation does go well with it? :D

Boza is ottoman drink. There is also arabic Ice-Cream Booza. But Bulgarian Boza is really delish. Traditionally used Brown Millet flour, sugar and some yeast and sourmilk ferments... You can find Boza in the western balkans too...

The thing about you grandma making you mekitza is tried and tested. Whenever we go to my hometown with my kid, my grandma would get up at 6 AM to make some. For her, the idea of him waking up and not having some mekitza with cheese to eat for breakfast is unimaginable.

The best Mekitza I've ever had is by a grandma that works as a chef in a hotel we stocked. We just finished unloading the truck and she gave me the most holy tasting mekitza ever. I've eaten many, we had a specifically Mekitza only bakery near where I live and my grandma makes amazing ones too but damn that one mekitza was on another level. Also the kebapche are heavily spiced with cumin that's why I LOVE them.

Good job trying some decent staples of Bulgarian cuisine but you just scratched the surface! Bulgarian cuisine is one of the most underrated and unknown cuisines in my opinion! It definitely has Greek/Turkish influences but you could say Bulgaria has had its influence on those cuisines as well. But there are so many unique Bulgarian dishes that the best way to describe it is they appreciate a flavor explosion. Vegetables and spices are incorporated into everything because everything grows in Bulgaria's climate! But I'm glad your experience was overall positive 😀

4:05 to 9:25 is not Kebapche. If you're talking about the meat thing well that's called "Руло Стефани" or in English (with literal translation) "Roll Stephanie". Kebapche is similar to the Serbian/Bosnian Cevapi/Cevapcic exactly what you ate later at that Kebap grill house. Also the sourness you tasted in the spinach soup is from the "Кисело мляко" (Bulgarian Yogurt).

I can recommend the kufte in Koprivchica. There is a restaurant by the river near a small bridge. The kufte there is the best kufte I've ever eaten!

Really would have helped to have a bg person give him some tips what to visit... He ended up eating cool bg breakfast - thats ok, but fkin weird shithole cafeteria lunch (neither stefani roll; spinach soup nor chicken with rice are sth unique bulgarian); and fkin serbian grill for dinner... Of course there are many other let's say regional if not strictly Bulgarian (as on balkan peninsula the cuisine has lots of similarities) But I would say this indeed is quite representative. And traditional things bulgarians eat through the day. Usually Boza is consumed with pastries like the mekitza or banitza, compared to cakes. Nice video and good review - quite a nice feedback from your side on what it tasted like and what you like (also what was not really impressive) Keep it up

The best Langosh is the Hungarian one. They use Potato starch and some salty topics like grated cheese and white garlic sauce. The secret to great bulgarian beans is fresh spearmint, red and green pepper, some carrots and slow cooking.

Yes bro, mikitsa is something we know from our grandmothers in the village, you wake up early in the morning and it smells so good The mekitsa is with cheese, later it started with powdered sugar, or natural without anything, just salt, water, flour I have to admit that this mekitsa is a bit different, Some put the cheese inside, like a kind of calzone We call this meat and egg roll Stefani Thank you for presenting Bulgaria.

When made at home, mekitzas would usually be eaten with jam, jelly or honey. However that's not viable on-the-go, so these places that sell them use powdered sugar.

@195Under30 - there is boza with REAL sugar - usually YELLOW cap , but this shop u visited (Sladkarnitza Pchela - cakery BEE) should have the good stuff. If u been to Romania a lot, zahar is захар in cyrilic (we have a lot of common words that sounds if not 100% same, 99% same, Romanians used to write and speak in cyrilic once upon a time)

Sadly Boza is full of every sweetener you can think of so it's not authentic. Before fridges existed, Boza was sold even when it went off a little bit and people loved it. The only statue of a Bozadzhiya (a person selling Boza) is in Bulgaria which is a silly but true fact.

You didn`t try the real traditional Bulgarian food, the one you`ve try are close to Asian one, not saying Turkish, because there is no such think like Turkish food, there is a mix from Asia, Afrika and etc. Everyone who made street food tours making same mistake. Unfortunately, because the traditional Bulgarians meals are incredible, we have meals older 5 centuries for example, but you didn`t try it.
