You should eat the "banitsa + boza" in the same manner as the "rakia + shopska salad": you take a bite of banitsa and after that, while you're munching on that bite, you sip from the bottle of boza. It is the common way of doing this, but it's not mandatory at all. After several years of doing this routine everyone finds his own way and pace... and manages to finish off both parts of it simultaineously. Guy in rakia bar was good, he told to take a sip of rakia, let it in and after to eat from the salad. By this way rakia's strong and warm taste mix and with the calming freshness of vegetables, olive oil and cheese. It's like a poem, if you do it right ;)

I recommend you try the classic mekitsa dusted in powdered sugar, or if you prefer savory, pair it with traditional Bulgarian white cheese (Sirene). As they say old but gold. Jams, creams, Nutella, or other sweet and savory options are good too but I find the simplest ways the best as you can fully enjoy the oily fluffy/crunchy pastry dough. For the banitsa next time don't ask AI but walk around the city. We have plenty of small bakeries right by the street and often the small and not eye-catching ones offer the best pastries. A good banitsa can be eaten both hot or cold depending on mood and it's like a universal Bulgarian snack for breakfast, lunch, or even dinner. I am not a huge fan of the Sirene and spinach combination and prefer only Sirene or the sweet options - pumpkin/apple with walnuts. As for the tradition of hiding a coin in banitsa or ritual bread, the idea is that whoever gets the coin will be rich, healthy, and lucky for the whole year. The boza is a very traditional drink and long ago it was served the way they serve you a good beer, filling a mug from a larger container. It could be sweeter or slightly more saur depending on your preference and choice. Nowadays you can only find it in bottles and different brands taste different. Some are good, some not so much. The saleslady didn't lie and from what I have seen browsing KZbin, most foreigners don't like it at all. You enjoying it was surprising but as it's one of my favorite drinks it was a pleasant surprise. By the way, it has a very low alcoholic content of about 0.5 or 1%. The name of the restaurant you went to was Raketa (Rocket in Bulgarian). Never been there but I was impressed by the waiter. His pointers were valid. Indeed, nowadays everyone preaches virgin olive oil but traditionally in Bulgaria we use sunflower oil instead. It's a matter of preference and I personally can't understand the appeal of olive oil for I find the taste a bit overpowering. The dishes looked nice and the Gipsy Banitsa is a very traditional, old-fashioned, and childhood thing. Next time if you are not vegetarian you should try some filling dishes like kavarma (resembles a stew with cubes of meat in it), moussaka (potato and ground meat dish), or grilled meat stuff (meatballs, kebapche, etc). Other traditional Bulgarian foods I suggest are kapama (a winter dish with pickled cabbage and different types of meat cooked in a ceramic pot), imam bayalda (have no idea how to type it in English as the name is actually Turkish, but it's a baked hollowed half eggplant filled with the inside of the eggplant, tomatoes, peppers, and sometimes cheese), or mishmash (a pan cooked mixture of mostly tomatoes and peppers with some Sirene and scrambled egg too).

The Tarator that you eat its cold soup , and very common to eat in the summer for refreshing in the hot summer days , if you come again in Bulgaria try tripe soup with beer best thing after heavy night with drinking

The mekitsa has many variants, but the original one that we know from our grandmothers is probably with white cheese. Banitsa is the same situation, it used to be only with cheese, today it is even with apple as a strudel Thanks for sharing Bulgaria

We are putting the coin usualy in the pita not in the banitsa but somme pple are putting it in the banitsa as well but the real tradition is you put a coin in the pita and then you cut it or break it and you give everyone in the family one piece and the one who find the coin is the one who will be lucky in the new year this is very old bulgarian tradition

It is milder than Toronto in the winter, Plovdiv is always warm, rains in the winter 🙂

Those places, are not that traditional. The tarator and Shopska salad were original. Mekitsa should have powdered sugar on it, not "that", and banitsa and boza - are new-age versions of the traditional ones. The boza for an instant, the only traditional ingredients in it, were the water and sugar... It would be best if you visited more local restaurants, those are fancy tourist traps. However, I am glad you liked our food and spirits.

Completely disagree! Banitsa with spinach is just as authentic as the cheese one. Also, boza is a must try, even if it is not the go-to option for most. It pairs well with banitsa

@@WorldFoodTour-wft tarator on shopska salad is bad idea, because it's too liquidy and will drown the salad. We have a very nice salad with Yogurt that you can try at home. Chop tomatoes, crumble generous amount of Feta cheese (I presume this is easier to find), pour some olive oil, season with salt and THEN top it off with a nice layer of yogurt (try not to use the too thick and sweet Greek yogurt, but some real yogurt). Tastes amazing and refreshing on a summer day. Difference between Feta cheese and the Bulgarian white cheese is that Feta is made from sheep' s milk and the Bulgarian Sirene from cow's milk. Sirene is lighter. Real yoghurt is also not thick and sweet (as the marketing invention Greek yogurt is). Real yogurt it is refreshing and light.
