I have a hunch that they may have deleted the mission because it went against the character that Rockstar wanted Jimmy to be. In the final game, Jimmy isn't really interested in Lola at all. The only time he helps her is in the Tenements, which by that point his respect with the Greaser's is already on the decline so he's probably only using it as an opportunity to try to send them a message, whereas in this deleted cutscene Jimmy falls head over heels for Lola in a matter of seconds, directly contrasting his attitude in the rest of the missions.

Also, on the Rumble mission, she mentions that Tad fights for her plus "Tad and all the rich kids", however you never see him involved in the Bully we have now (probably forgot to re-edit that line to Chad, since that would have made more sense).

In "Rendezvous"' defense, I think it's an interesting fun, small, mission because Tad is moving and you can maybe accidentally shoot him. In case of "The Candidate" and "Cook's Date" the one you're protecting isn't moving and they were being thrown at by something but in "Rendezvous"' case, the character you're protecting is being wrecked and getting smashed to the ground. So, I don't see why that reasoning was great enough. If "Rats in the Library" had made into the final cut? Why not "Rendezvous" because both of them serves purpose, "Rendezvous" for Tad and Lola's relationship and "Rats in the Library" for Townies' doings. "Race the Vale" and "Lola's Race" are pretty much the same but the difference is, "Lola's Race" is much more harder, with Johnny, with moving obstacles, rigged tracks, and confusing map outline.

To expand on the reason why this mission got removed, wrong part of town would come right after which is like another sort of guardian angel mission so it would have felt pretty repetitive

Well since all the content is just about there, it'll be fun to see if someone takes up the challenge of making it work entirely as intended. It's not quite as interesting as the Paddle but at least the cutscene stuff is mostly in tact.

In the cutscene, they are at the greasers hideout that was shown in "Preppies Vandalized". I guess this place was supposed to be more essential along the greaser path/chapter.
