RABBIT CACCIATORE
1 Rabbit
1 large Onion, sliced
4-5 cloves Garlic, crushed
16 ounces Mushrooms, quartered
½ teaspoon Red Hot Pepper Flakes
1 cup White Wine
1-quart Peeled Tomatoes
1 teaspoon Oregano
2-3 Potatoes, cubed
Salt and Black Pepper
Olive Oil

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. It is in the province of Foggia in the Puglia region of southeast Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina enjoys making food for her family in the same old fashion ways as she was taught by her mother and grandmother in Italy, and also new things she has subsequently learned from family and friends in America. She also enjoys gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera and behind the scenes?
Grandma Gina’s retired son-in-law, Nick, does the filming, editing, production, and channel management. Her daughter, Maria, helps with food preparation, kitchen setup and fan support. Also, Grandma Gina usually has one or two grand-kids in the kitchen to help.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

Signora Gina Rabbit is so delicious, people think its cruel but back in old days to have a piece of meat at the table was a delicacy. We had farm with rabbits, chickens, goats. Rabbits multiply so quickly that was the meat to eat. People might think it's cruel that was part of life. Rabbit meat tastes 100 times better then chicken. I never understood why people think it’s cruel to eat one kind of animal, but not another. As long as it’s safe to eat, and it’s killed quickly and as humanely as possible, I don’t see the problem. People are too spoiled and sensitive these days. I’m not the type of person who typically says that, and I always defend my generation when older people say such things, but in this instance, they are right. It’s easy to say that eating animals is cruel when you don’t know hardship.

My grandmother from Jamaica used to say that it was all made to be eaten. When you are limited -food, especially meat 🥩, you’ll be happy to get that. Rabbit is delicious. Here in Hawaii, there is a culture that eat dog meat. Since I moved here to Hawaii (over 30+ years ago) , I have NEVER seen stray dogs ever. I certainly would eat it if I was starving.

How wonderful...! So many memories of my father going hunting and my mother preparing the rabbit's he caught for us. She made it with red sauce at times, but also with green olives and capers on other occasions. So delicious!!! Given the times we’re in, I appreciate the variety in my freezer for future use. My garden is being munched on by an abundance of rabbits. Every so often one checks out the trap set out and he ends up in our freezer. Wonderful protein source! Thank you Nona, for sharing your recipe.

i love this woman!!!!!! reminds me of momma romito. known her for years! she tought me a lot about cooking. learned alot from her from 2004 to 2006. she has passed some years ago. i think was 2010 when she did.. a 76 year old italian lady at the time that spoke broken english! brings back alot of memories of her! i have tried making some of the things from your channel. all unbelievable! thank you for putting out her recipes!

Growing up in the far north of Canada 🇨🇦 my family ate mostly off the land. I have fond memories of eating rabbit , moose deer , fish , ducks ,geese partridge etc, many ways.

I've never eaten rabbit. I remember my Dad bringing home this white bunny rabbit and my mom had to skin it and cook it, but I wouldn't eat it! But you make everything look so good, I might try it now!

I hunt for mine and most of the family loves it, but my daughter is uncomfortable with the cute to cooked factor, (in fact she hardly eats meat of any kind anymore,) so I understand what you're saying. If you normally eat chicken store bought, and depending on where you live, some butcheries do sell farm raised rabbit so you can skip the harvesting part of the process. I gotta tell you though, if you can't get over the cute to cooked factor, skipping that part isn't likely to help. I serve my daughter something alternative out of respect and that's okay too. Eggplant makes a decent substitute in recipes like this. I expect she'll eventually just go non-judgemental vegetarian.

Back years ago when times were harder people ate what was available! Someone said they thought this was gross. Maybe one day they will be glad to have rabbit or whatever. Times change ,we can learn so much from our elders and should. Much respect for Gina! Lots of love!☺️😋😋😋

Fried rabbit (Southern style) is very good! My mother grew up during the Great Depression, and they trapped opposum, raccoon, squirrels, and wild turkey in addition to raising their own chickens. I’ve never had rabbit cacciatore. It looks delicious.

I ate wild rabbit once while my then boyfriend, now husband was deer hunting. Apparently the rabbits there were eating a lot of spruce or somethin wintergreen flavored. We ate it with tomatoe sauce and spaghetti. Unfortunately it just tasted like wintergreen. I suppose it depends on the time of year and their available food sources.

I like rabbit very much I cook as casserole we use to marinate the night before keep in fridge cover with red wine meat come more tender as well take smell of the rabbit away , next day cook first with wine again let assorb the wine with lid on drain the left over wine then fry with onion and oil till meat brown then put a can tomato peeled salt pepper chill basil let cook lid on till tender Some people cook in the oven too

I’m going to have to try this! We raise meat rabbit. Our favorite way of eating it is rabbit nuggets lol I’m not a fan oh eating rabbit off the bones. This is definitely worth a try, for sure! Thank you for all the wonderful videos!!it’s always a pleasure watching and listening to you. I’ve learned many things from you!

I love rabbit stew I haven’t had it for years as I never see them in the butchers for years, but the first time I see rabbit in a butchers I’m going to buy them

This fall I will have to try this. Great job my dear. You sure do not need to apologize for something so outstanding! The only thing I have seen you cook that made say no is octopus. 😁😁😁 . That's just me but I wonder if I have had it cooked correctly. It's always been rubbery. Anyway God bless your sweet heart and thank you.

Growing up my friends raised bunnies and market pen rabbits for 4H. Needless to say. I had many pet bunnies and we had many meat rabbits. This looks spectacular. Love to see you sweet Gina. 💜
