Buon compleanno Bella! You are so blessed to still have your mom! My mom Was born in Naples Italy and came to this country during WWII - I am first generation born on Long Island. I Miss my mom. She passed from pancreatic cancer in 2011 and was 68 years old - I miss her everyday! Watching Gina reminds me of my mom! Her cooking, her broken English- her garden - the good old days! Happy Belated Birthday! I want to thank you for all your hard work cooking all your wonderful dishes. My mom always said if it wasn't for my blonde hair and blue eyes she wondered if they gave her the wrong baby in the hospital because I love Italian food so much. I miss her so much she's been gone now 38 years , I was 18 years old and I'm so happy I watched her cook even though she would chase me out of the kitchen at times. lol I have 3 sons and they say no one cooks l like me and I tell them my mom was the best cook ever. I've been making pasta and eggplant forever. I make it almost the same way. I do peal my eggplant, and I have not added the cheese in little chunks. I usually use grated. I love the Ricotta at the end too! I never had it like that, but I will try it the next time I make it. Looks delicious!!
