hi leonora thats an interesting recipe i like bitter melon i once bought bitter melon tsukemono from an okinawan grandma at a fair that was very good. im going to try this when i get some bitter melon thanks for showing how to make it

My father is Ilocano and my aunt had a similar recipe except it was not para boiled but rather salt was added to the chopped up bittermelon and then also triple rinsed but she let it sit after mushing the chopped vegetable in the salt for 5 to 10 min then rinse it out with cold water. Then add more salt and mush it up again and let it sit 2 more times but before the last rinse out she would add thinly sliced onions so it will lessen the the onion bite as well OR just add scallions instead of onions and some freshly chopped tomatoes and anchovy paste (Bagoong) to taste. sometimes she would quick fry the paste with some garlic and ginger chopped super fine with a touch of oil and add it that way. I like the way it stays crunchy and the water tastes so sweet after eating this salad.

I'm looking forward to make this. I've tried to eat the bitter melon and also make it in Indian curry but it was rough..i know it's very good medicine for blood sugar controlling

Thanks for sharing. When you squeeze out the bitterness, will the nutrients also be squeezed out? If we don’t mind the bitterness, is it better to leave it in?

Yes, you can do that. I find that the squat, lighter colored bitter melon has less bitterness in it. But it's not always available.
