Made some space in my freezer and headed to Costco now. Since it can be hard for some people (like myself) to cut a consistent thickness across all steaks, here is a cutting tip I learned from my grampa....use the width of your knife as your gauge. Find a knife blade that is about 1.25 inches tall (or as thick as the steak you want). lay the spine at the edge of the meat, now without picking up the knife from the meat, rotate the knife so it is now blade down....away you go. Same size cuts every time.

You didn’t “butcher” the ribeye.You cut it. The men and women that prep hole cuts in grocery stores are in fact, meat cutters. Butchers Knock down the whole animal if and when it comes in to their shop as a half or a quarter animal. I heard this fellow referred to what he was doing as butchering also. That term is technically incorrect.

Agree 100%. After watching your video last year, I purchased your recommended knife and have been cutting my own ribeyes ever since. It is so easy! A couple of weeks ago I purchased a whole rib eye from Sam's. It was large and I got 20 steaks out of it. I paid $12.99 a pound. I will never go back to the grocery store for ribeyes. Thank you!

Folks I have been a meat cutter for 30 yrs and the best knives on planet earth are Forschner Victorinox, which it looks like he is using. You can order them on line you don't need this guy. You also don't need a 10 inch knife for slicing steaks, an 8 in will suffice. You would use a 10 in knife for actually breaking sides of beef.

Another cheatcode is to shop standing rib roasts during the holidays (christmas/easter). Publix and other major chains sell them at as much as $8-9/lb savings and you get the ribs as well. Sometimes still attached, others not. I bought 8 last easter and they lasted me a while and I'm full carnivore.

That's exactly what we do. Our local Publix has rib roasts at Christmas at 6.99/lb. We buy about 6 of them and separate the ribs for the smoker. I steak a few out and leave the rest as roasts. Thanksgiving I buy 5 turkeys at .49/lb and Hams at easter for around 1.29/lb. Having a large freezer and a good vacuum sealer is essential.

I found this channel about a year ago and have been cutting my own steaks and grinding my own meat ever since. I cut up a bunch of NY strips and I grind up either a whole brisket or a chuck roll which I learned from The Butcher Wizard. Just my two cents

As a cook, I know your videos will resonate with the people who are looking to kick their game up. It’s not hard, but you have to know the product you’re asking for which is tough for a lot of folks. Doing the butching thing, most aren’t really comfortable doing it. Going to a COSTCO or other store and paying for a sub primal is daunting. I actually love breaking subprimals down. It reminds me of the animal and the care that we have to display. The same is when you take a whole fish and break it down. There is something special in preserving what you have caught.

I go to the butcher every two weeks and buy a loin/sub primal of bone in choice ribeye. I have them cut it at 1 inch and no trim. Payed 9.99/lb 3 days ago and it fluctuates up to 13.99/lb. You will get an average of around 14 steaks.

Really enjoyed a “day with the meat cutter dude”…My father had a meat market when I was growing up. I have 4 brothers and we were learning to cut meat when we were about 7 years old. The older we were the more we got to cut more and better cuts of meat. However it has been so long that I forgot all of the trade secrets…you reminded me how valuable learning the cuts of the meat, locating the prime and sub prime. During holidays, if you look in the circular coupons (easter/4th july/Xmas) Kroger/Albertsons usually has choice ribeyes for $5.79/lb. I stocked up this year. It's one roast per customer (phone number) so I just go back the next day and get another one with the other phone number. Just FYI costco isn't always the most affordable for meat.

Grocery stores do loss leaders to get you in the store with the assumption that you will buy a lot more stuff. This is why grocery stores sometimes has meat cheaper. They are selling it for less than it cost them. Definitely something to take advantage of.

The trick is being patient and waiting for sales when they come through. The last time i bought a whole ribeye at my butcher it was $8.45 a pound, and i cut out almost 17 ribeyes from it. When we compared it to Walmart we saved a little over $70

So, as the butcher was filling the display case… I asked, “limit 2?” So he yelled at the other butcher cutting steaks🥩 and asked him to weigh the piece he was about to cut‼The answer was, “ten pounds” and the butcher beside me said, “that will be your first piece!” I Bought the whole 10 pound piece and another 5 pound roast…and I was very, happy, happy, happy‼😋😋😋At $6.88 🇨🇦Dollars a lb. What I've been doing for the last few years now, is I wait for Nov and Dec to roll around and when the meat dept at the grocery stores start selling their Choice Strip Loin and Ribeye roasts for 5.99-7.99 lb. for the holidays, I purchase a whole sub primal from them and cut it up myself and vacuum seal and then I have Ribeyes and NY Strips the whole year round. The Chef's Store is a great recommendation if you are near one. For some reason my Costco and Sam's Club do not have great prices on beef anymore. I will also purchase the sub primals for the Chuck Roll and Top Blade (Flat Iron) and section out the cuts as well.

You can save a lot of money buying chuck eye steaks. They look identical to ribeye as far as marbling goes but they tend to have a bit more fat around the edges. (Not a problem for me 🤪) It is NOT what most people think of when they think of a cut of chuck steak. You notice when he's describing the parts of the cow there's a transition from Chuck to Rib. The chuck eye is just a little smaller in diameter than ribeye but comes from the same are a little closer towards their shoulder. Sometimes they're not quite as pretty because it seems to taper down smaller the farther from the rib it goes but I can honestly say there's times I've had chuck eye that was more tender and better flavor than ribeye for 2x the price. Prices fluctuate by region but I've seen chuck eye as low as half the price of ribeye but it's always at least $5/lb less.

If you're as big of a cheapskate as I am, you can find other cuts like petite sirloin roasts for $3-$4/lb. I highly suggest a sous vide, if you like meat, and especially like to save money on cheap meat (cook for 24 hours, without ruining it).

I wouldn’t advise anybody to go to the butcher counter and ask for a “sub-primal beef rib” because they’re going to look at you like you have two heads lol! Just ask for a whole rib. This trick still saves money under a fair comparison with Costco whole ribeye versus precut. At my local Costco, a whole ribeye is $13.59 per pound (Choice), while precut is $16.99 per pound (also Choice). At an average of 3.25 pounds precut, and 13.35 for whole, you're still saving well over $40. The savings buys you almost an additional precut pack, plus trimmings for ground beef or tallow.

Just eat ground beef if you're worried about cost. You get all the parts of the cow that actually makes it healthier for way less money. This cut of meat isn't grass fed AND finished, you can get grass fed ground beef for cheaper

Another unsung hero in the meat world is the Top Sirloin. You can also buy this prepacked and it's easy as pie to cut. While this cut is NOT a Rib Eye replacement it is far cheaper and the quality of the meat especially marinated is nice as well. Usually I can buy one of these steaks large enough to feed my family of 4 for about 6-8 bucks on sale.

I highly suggest a vacuum sealer and sous vide, because of the sheer convenience of the process (I'm quite lazy). You can season, seal, and freeze... and go straight from the freezer into the sous vide to cook, for a huge range of time, without ruining the meat (anywhere from from about two hours to FORTY EIGHT HOURS). Which means that you can drop it in, when you leave for work, and it's perfect whenever you get home and decide to eat. Even if plans change and you leave it in for an additional two days... you just cannot beat the convenience and results of sous vide.

Glad I found your channel! I'm a senior on Social Security. Ribeye steaks have not been a part of my budget for a number of years now, as even $13.48/lb is a total extravagance. I do, however, practice what you're teaching here. Instead of buying the primal cut ribeye, I buy the sirloin or the round, depending on which is less money per lb, from my local grocery store. I then cut and grind it myself and vacu-seal it into 1 lb packages and sirloin tips/stew meat, which brings my cost per lb between $3.50 to $4.39 per lb. Needless to say, an 8 to 10 lb sirloin yields 8 to 10 weeks of beef meals. I've also learned to do this with pork loin for chops, and pork shoulder for sausage and sausages, bringing my cost per lb between $1.35 to $1.99/lb. Yes, it takes a little work and investment. I opted for a Kitchenaid Pro model mixer and collected attachments that allow me to grind meat and make sausages (Get the all-metal attachment), a vegetable strainer attachment to make sauce from my home grown tomatoes, and a pasta roller and cutter set. My adult son lives with me, and eat well!

Thanks much for the butcher lesson! I’m a man in my 70’s and came from a family with five sons and no sisters! Blue collar steel mill town. My dad was a WW2 veteran Italian and my mother was a Polish lady! She and my aunts were very good ethnic cooks! My dad did most of the grocery shopping and taught all of us to do the same! I passed my skills to my two sons! My father and uncles however were the best cooks in the family! We couldn’t afford steak but what they could do with an Eye of the Round was a meal fit for a King! The one lesson was never to buy a Select cut but spend on USDA Choice! No regrets!

Would love more info about your cutting board. Is it’s better to use wood vs other materials? Should I use it only for meat cutting to avoid cross contamination? Wood is best. If it’s sealed, you can sanitize it with a mild bleach solution and a little detergent. Mild as in you can’t smell it. Been using my Boos cutting board for 25 years. Nobody has ever gotten sick from my kitchen, and I cut everything on it. Frequent wiping with a damp towel in solution is all I do. If you like plastic, go for it.

At my Costco too. Only $.20/lb. difference. I guess that’s how you can get around Costco blade-tenderizing them. But it’s not worth it to me when I have other local grocery stores that have pre-cut ribeye/T-bone, and sometimes even Porterhouses for $5-7/lb.

Go to a farmers market or straight to farmers and buy a quarter of a cow. Stop going to Costco, they are not cheap, I go to Gordon foods store and save over 100$

Why not compare the precut Ribeye at Costco vs the Whole Ribeye at Costco? That would of been a fair comparison IMO. It's not as big a cost difference.

Yes, depending on how they are trimmed up at Costco you may end up paying a little more / lb, but with less fat scraps and no effort or freezing.

@@johnbollinger4896 I bought the whole Costco brisket at $3.99. That was a great deal, “free brisket”. Very little waste after I ground up the trimmings. I blended the ground brisket 2:1 with 80/20 chop meat and made great brisket blend burgers.

@@SamEagle17 - Let's talk freezing. When you say "no effort freezing" are you simply throwing the steak packs into the freezer right as you buy them without doing anything to them? I've heard, but haven't experimented with it, that the steaks won't last as long that way. When I heard that, I bought a vacuum sealer and never looked back. Now, if I'm not going to eat all the steaks right way in the precut pack, I'll take them out of the pack and vacuum seal them before freezing. I bought the vacuum sealer at Walmart and a box of bags at Costco for under $100 and that's a heck of a lot of bags!! It'll probably seal up 4-6 subprimal roasts cut into steaks.....maybe more. What are your freezing methods?

@@jontnoneya3404 What I meant is buying the Costco butchered steaks you don’t have the volume and can buy what you will use short term, without having to freeze any steaks. For freezing, I generally use zip lock freezer bags. I’m pretty good at getting most of the air out of them. If I were consistently buying bulk cuts and storing for longer periods, I would definitely invest in a vacuumed sealer.

I picked up a dozen individually wrapped ribeyes at Aldi at $13.49/lb. I was very satisfied with them. As a matter of fact, I found them to be the best vs. any of my local grocery stores.

Freeze properly, get your freezer paper, your freezer plastic and if you need get paper dish for under it and straws to suck the air out or better yet get a meat vacume freezing kit that will do that part for you. And have a freezer set at the right temprature to hold all the meat and a good pen to mark the date you froze. Sticky lables will also freeze and fall off. Last thing if you wrapped in thin plastic wait till meat is thawed before unwrapping as the thin plastic will tear. Best of luck

Today was my first encounter with BW videos. I am so excited! I can’t wait to get the whole ribeye to make my own steaks! Question. What’s the best way to freeze and what’s the longest these steaks will keep? I’ve dried the steaks with towel paper, wrapped in butcher paper, put in legit freezer ziplock bags and still have had freezer burns. Suggestions??? Thank you for your awesome videos. Use cling wrap, for some reason they are the best in the freezer. Then put the individuals in large zip bag and remove as needed.

You need a vacuum sealing system with the special bags. Pick it up used if you have to. This removes most 0xygen and steak looks good for many months with no or little freezer burn.

I enjoy these videos and have done several ribeyes like this. Unfortunately the last one I bought from a local store in VT I didn't catch was from Mexico and it was the leanest ribeye I have ever seen. Almost no marbling, even at $6.99lb it wasnt worth it.

Just bought 40 pounds of Rib Eye Roast at my local US Chef Store...10.59 a pound...basically if I had gone to Sams Club or Costco I would have paid $120 to over $200 more....crazy...got 32 steaks out of it...amazing...love my new vacuum sealer...this is the way to go...I had a gift card to my local butcher..the only thing in the joint that looked any good were bone in ribeyes..they were $32 EACH...ugh...they weren't even that good...thank goodness for the gift card....

Just bought a whole Ribeye from Samsclub, 12.98 lb the whole piece was 239.22 cut it up myself, also cut cut up beef tenderloin filet 138.39 / 24.98 Lb. Ive been doing this for years.. its the way to go.. 👍

I'll take A of course. The first time I bought a whole ribeye subprimal at Sam's (May 23) I got severe sticker shock...$347.00 for 27 lbs of meat, it was prime and it was great. I'm presuming the one you got for 13.49 a lb is choice.

Wait $347/27 = $12.85 per pound. FOR PRIME? That's really an outstanding deal. And yes, the $13.49/lb price is what I'm seeing for Choice at my Costco. Prime goes for like $17.99 or so, it seems to fluctuate more than Choice. It's tough paying all that money but when you look at the per pound rate, and knowing how to properly vacuum seal and then freeze them, it's well worth it!! I haven't seen under $15/lb prices for Prime Ribeye in over a year.

@@steveludwig4200 - CAREFUL - that beef is often NOT USDA graded and it's often raised in Mexico where they can feed the cows anything....even stuff banned in the USA. If it's not graded USDA, Prime or Choice you have to assume it's select grade or even worse. Price isn't the only consideration bro.

The ribeyes I spoke of are either Select or Choice and trust me, even the Select grade ribeyes are excellent as I grill them over mesquite or pecan wood. And these stores also sell Prime Top Sirloin (with the fat cap) for $7.99 when on sale.

Do you plan on doing the beef tallow video? I would love to see it, so I can use it to fry my potatoes. And I heard a few years ago there are other reasons for tallow. Maybe you can also do a bone stock from slow cooking bones to make it.

We have a local butcher that's a full service Food Service and Retail shop and they also slaughter for public and Registered Meat Handlers. I bought a 15.5 lb. whole beef Ribeye Loin for $9.99 lb. I usually have them cut it as they do it for free, but decided to bring it home and cut it up myself since I was losing all that trim and fat. Any extra fat will be used to make Beef Tallow! Pre-cut USDA choice ribeye steaks at Sam’s Club are $13.99/lb right now and I don’t have to worry about storing more than I can eat quickly. I like the idea of cutting your own so you can get them the thickeness you want and trim the fat the way you want but it’s not a huge savings when you get the pre-cut steak from the same source as the whole subprimal.

Exactly. The difference in individual steaks and the hole loin is about .50c per pound. Ive never paid $21lb for even a prime ribeye. Those run about 18-19 per lb

Next time you calculate savings pls remove the weight of the trimmed loss. It would still be a great deal but nice to get an apples-to-apples comparison of trimmed steak. You might also suggest how we might freeze and store these steaks because very few of us have any need for 14 steaks at once. Thank you, great video.

Vacuum seal and freeze until ready to eat. Defrost in the fridge, let it sit out for 30 min before cooking. Season as you like. I cook mine in the air fryer 7 min on each side for a perfect medium rare.

My foodsaver was my best investment ever… I’d have 20lbs of meat at any given time in my freezer, and yes it’s always been fresh once I get to thawing it and eating it.

Meat freezes well. Just make sure it’s thoroughly wrapped so no air can get to it. Vacuum sealed if possible. When you’re ready to use it, thaw it in the fridge on a pan in case it drips.

Sometimes I can buy rib eye, T Bone or Porterhouse for about 10 bucks per pound and they taste great. I live in Michigan. I can buy good potatoes for $2.99 for 10 lbs (on sale) at times.

I'm so with you regarding buying my meats at Costco. I have a vacuum chamber sealer and fill up my freezer for at least a few months. Yes, you will get a sticker shock when you see how much it costs but don't let that stop you from buying it.

Prices are subjected to your local rates........those are some pricey steak prices. I like a good ribeye and totally agree with cutting your own, if you have the freezer space of course. From a strictly price savings view, I prefer a good NY strip. Much cheaper and just as delicious. Can find those for under $10/pound.

I buy half a cow from a farmer friend every spring. It runs around $4 to $5 a pound. It’s all cut, packaged and frozen. There are no hormones or antipsychotics.The cows were primarily grass fed. I’m spoiled. When I have to buy some meet at the butcher’s or the grocery store, it just is the as good.

Been doing this for 5 yrs; our preferred primal is NY strip. Often get bone in and use a simple butchers hand saw, a good knife and of course butchers paper.
