Sage leaves - 8 leaves

04h05m -Start your barbecue or braai and set it up for indirect heat. Temperature setting 180 degrees Celsius or 350 Fahrenheit.
01h30m - Remove the spine from the chicken
00h45m - Put the sage and butter under the skin
00h40m - Rub the chicken with olive oil, salt, pepper and lemon zest.
00h35m - Roast the chicken until the core temperature has reached 75 degrees Celsius or 167 degrees Fahrenheit
