Buttercream - soft and smooth without worrying about ice
Ingredients: for about 60 4 x 16cm ice creams
Cream juice:
- 1700ml Filtered water
- 150g Sugar
- 50g Maltose (if not, increase sugar to about 50g or 100g depending on taste)
- 400g Fat cream powder
- 6 -7 Pandan leaf branches 30g
Thick cream base:
- 200g Condensed milk
- 400ml Coconut milk
- 200g Fat cream (dwarf rich)
- 100g Tapioca starch
- 200ml Unsweetened fresh milk (can be replaced with filtered water)
The finished product is about 2 kilograms of 8 ice cream
- 1500g Avocado 034 (after preliminary processing, 800g of avocado meat remains)
