This is so easy to throw together and adds a punch of flavour. The avo and butternut are so complimentary and the coconut adds a beautiful sweet crunch. I can eat this dish on its own as a lunch or even a light dinner. It is so creamy and the textures bring this dish together. Give it a try and you wont be disappointed.
