Butternut Squash Soup

In the winter and fall, this soup really warms me up. This is an easy-to-make recipe, and it can be prepared a day or two in advance. If you want to embellish it and make it a fabulous antipasto, you can add croutons or some poached shrimp just before serving. Join me in my kitchen, along with my beloved late mother, Nonna Erminia, and my granddaughter Julia, as I prepare it for you here. Tutti a Tavola a Mangiare!

I’m with you Lidia and definitely with grandma I love soup all kinds and growing up in the Azores we had all kinds of beans and veggies so it was soup,soup and more soup and yes you can say it is very healthy and it’s good to have the young generation eating healthy,vitamina.God Bless you all ❤🙏🏻

I lost my beautiful mother, Sarafina Catarina, 2 1/2 years ago at 99. She always had an elegance about her, like your beautiful mother. And yes, soups are wonderful.

My favorite is chicken soup as well. Unfortunately the prices of chicken now is out of my reach. I enjoyed your Mom (Grandma) and miss her. My Mom lived with me 20 years before passing in 2011. I don’t like creamy soups either. This soup is interesting and possibly more affordable until chicken prices come down. Grazie!!! ❤️

My favorite will always be my Mom's(Grandma's) chicken and dumplings. For the holidays I usually do a 50/50 combo of sweet potatoes/butternut squash, but this soup looks delicious and will definitely make a pot of it. 😋 Thank you for all of these great recipes. They are much appreciated. 🥰

Saw the recipe earlier this afternoon and decided to make it for dinner. Brief shopping for a few ingredients like the Squash and some other stuff. Anyway I made the essence of the Butternut Squash Soup and i just winged eyeballing the ingredient measurements from the video since i'm a decent cook to just eyeball it. I decided to made the soup recipe my own while making it, so i added some Garlic, Thyme and the Scallions into the soup vs Scallions at the end. I decided to make it a little chunky vs using the blender which i didn't feel like cleaning so i just mashed it all with my Potato Masher in my Dutche Pot. A little chunky so it still had some texture. The Orange Juice and zest does add an interesting undertone touch to the soup flavor which i've never added before in any my soups. Something to remember. It all turned out well and i quite liked it. Got enough soup for the next few days which is all good and fine by me. Thanks for the Inspired recipe Lidia!
