This video reminds me so much of my best friend Bob who passed away a little more than two years ago. I grew up where a pasta meal was a pound of speghetti drowned in meat sauce. For me pasta was no more than a carrier for the sauce. Bob used to leave me puzzled saying not too much sauce. He was Italian, growing up watching his mom and grandma make everything by hand. He taught me so much about Italian cooking. I love pesto but never make it. Once again you have inspired me Lidia. I’m going to try making pesto.

Oh Yes 👍 I Love Pesto! I thank you so much for sharing this wonderful recipe, I learned a great deal from this video! Toasting your choice of nuts to release the flavor, and the leftover pasta water on your pasta after fishing it out with tongs allows the pesto to blend in beautifully! And especially your garlic technique - oh I bet the kitchen smells amazing while it's baking in the oven! But if I were to have some extra sauce on my plate, I love wiping it up with some toasted bread and finishing it!

Hi Lidia, I use wild garlic ( ransoms ) every spring for my pesto mixed with parmesan, toasted nuts and lots of olive oil, whats great its free, I forage for the wild garlic and jar it, it lasts me months in the fridge, plus I pick new weekly till its all gone. I use this in lasagne, tortellini, gnocchi etc 😋

This looks delicious, Lidia. I just found your channel--we have two of your books and have made many recipes out of them. I've made pesto with spinach and cilantro just because that's all we had, and it turned out OK with the other items-garlic, pine nuts, salt, oil. But I never thought of roasting the garlic and using almonds or other nuts. Grazie (from the Chicago area)!

I wouldn't waste energy by turning on the oven just to roast two heads of garlic. Can be done quickly in a microwave (peel cloves first) or roast in oven alongside another dish to maximise use of an energy intensive appliance. Roasted garlic cloves last well in jar in the fridge covered with oil.

Great video but............. The anchovies I've never tried and I was thinking to heat the anchovies in olive oil and cook them a little before putting them in the food processor??? I'm not sure if I even like the taste of an anchovy but I'm willing to try them and with the other ingredients anchovies might not be so obvious in the pesto.

Lydia my question is this: when making meatballs, a popular chef adds half a cup of warm water to the meat before rolling them into balls? I tried that once and the meatballs fell apart. I see you don't add the water in your recipe. Why does this chef do that???? I love your book about your family and coming to America. Amazing life you have had.

The LAST thing I would do is cook an Italian dish for an Italian that would freak out because I broke the Pasta in half...sorry but it's my House and my Cooking....I don't like your Pasta hanging out of your mouth and slurping it in at MY Dinner Table... see how that works.?
